Avocado Sandwich – Guacamole Sandwich With Veggies
Are you looking for an avocado sandwich recipe? Today we are sharing our avocado sandwich which I’m calling a Guacamole Veggie Sandwich. Everyday I’m making it a point to eat a healthier lunch. If you are ready to get more vegetables into your meals or are looking for a vegetarian sandwich you will love this veggie sandwich idea. I love making veggie sandwich recipes. Do you? They are one of my favorite sandwiches and I never tire of them.
This avocado sandwich is easy to make, tastes good and healthy for you. Basically a triple threat of goodness.
If it’s still really cold where you live or you want this sandwich as a dinner you can pair this avocado sandwich with soup. This recipe is for two but, you can double or easily triple it.
Guacamole Sandwich
This is seriously one good sandwich from my treasure chest of sandwich ideas.
What you will need to make this sandwich
- bread
- avocados
- tomatoes
- cucumber
- sprouts
- limes

How to make a guacamole sandwich
For today’s recipe I used New York dill Rye Bread but, you can use what ever bread you enjoy.
- Step one make the guacamole mixture from the avocados by using the recipe below.
- Pre-slice your veggies
How to assemble the avocado sandwich
After making the guacamole mixture spread it onto one side of the bread. (as shown above)
Guacamole Veggie Sandwich Recipe
Try this Guacamole sandwich made with veggies. This avocado sandwich is vegetarian, easy to make and packed with tasty guacamole. I call it, "Guacamole Veggies Sandwich" no matter what you call it, it's one healthy bite after another of deliciousness!
Ingredients
- 1 avocado
- 1 clove garlic peel, crush through garlic press
- 1 to mato
- 1 cucumber
- 1 lime quarter cut
- 1 basket of sprouts
- cremini mushrooms about 2-3
- bread I used Dill Rye
- salt if desired
- pepper or cracked pepper to taste
Instructions

Wash veggies, with the exception of the sprouts they should be prewashed.

Peel and pit avocado put into a bowl. Add cracked pepper and mash. Next add a squeeze of a quarter piece of lime. Add crushed garlic clove. Mix together.

Peel and slice thinly cucumber about a half if it's a large one.

Thinly slice tomato and mushrooms.

Next build your sandwich.

Layer avocado, cucumbers, mushrooms, tomato and sprouts onto bread. Top with second piece of bread and slice.

Optional dash of salt if desired. *I didn't use salt
Recipe Notes
This sandwich ideas: Guacamole Veggie Sandwich can easily be doubled or tripled. Want to spice it up a bit? Add chopped jalapeno peppers, or dried jalapeno pepper seeds.
Assembly is super quick and easy.
Add cucumbers to the guacamole.
Layer mushrooms on top of the cucumbers. The recipe can easily be adapted with your favorite vegetables.
Next top with the mushrooms with tomatoes.
- Add sliced purple onion, lettuce, bell peppers or what ever else you’d enjoy. Change it up with your favorite seasonal veggies.
Add sprouts to the top of your tomatoes. Top your sandwich with your other slice of bread.
- If you have extra avocado mixture add that to the other bread slice if you like.

Oh yum! This used to be one of my go-to sandwiches but I had forgotten about it. I worked in Santa Barbara for a while and the little sandwich shop next to where I worked had a sandwich just like this called “The Summerland”. 🙂 They were so good and you’re right, really easy to make on your own.
