Deliciously Easy Chicken Fajitas 30 Minute Meal
One of our favorite weeknight dinners is Chicken Fajitas. There are several ways to make fajitas, easy chicken recipes, and this chicken dinner is one of them. Are you ready to see how to make chicken fajitas? You can use this recipe for chicken fajitas tacos, and chicken fajita burritos too.
What I like about this fajitas recipe is that it’s easy to make family dinner, and all done on the stovetop.
Chicken Fajitas
With Cinco de Mayo coming up we thought you might enjoy our chicken fajitas recipe. But, this is a recipe you can use any night of the week. Prep is quick, and it’s another one of our 30-minute meals.
How to Make Chicken Fajitas
You will need to have these ingredients on hand for making fajitas
- Chicken (skinless, boneless) 1 package
- Garlic powder
- Salt, pepper, paprika
- Olive oil or vegetable oil
- 1 Onion (white or yellow)
- 1 each Red, green, yellow bell peppers in any combination
- 2 Limes
- 2 Avocados
- 2 garlic cloves
- Cheddar cheese, or Monterey Jack cheese or your favorite Mexican cheese
- *optional black beans, and jalapeños
Instructions
How to cook chicken fajitas
First thing to do is prep all your toppings, and prep veggies for cooking then set them to the side to use as needed. Keep them in individual bowls.
- shred your cheese
- slice your limes
- slice all your bell peppers
- slice your onions
- mince your garlic
- peel, and slice your avocados (squeeze lime over the top)
Next take your chicken out of the package, add oil to your non-stick skillet and heat slightly. Add in your chicken, the heat should be a medium heat. I have a gas stove, adjust as needed for electric stoves.
- Sprinkle a dash of salt, pepper, paprika, and garlic to the top of your chicken breasts.
- Cook on each side 5-8 minutes on each side until cooked to 165 degrees internal temperature.
- NOTE: When you flip your chicken to cook the second side add some red bell peppers (not all of them) into the pan.
- Stirring the peppers as needed just to add a little more flavor to the chicken.
- Take this all out of your pan.
- Set onto a cutting board, let rest until ready to slice.
Add the rest of your bell peppers, onions, minced garlic. Cook in oil, stirring until tender. If you like spicy chicken fajitas add in seeded jalapeños or poblano peppers. You can also add jalapeños on the side as a garnish if you have small kids who don’t like spicy foods.
Slice your chicken. Add to a bowl, or plate.
Serve with warmed flour tortillas, corn tortillas or Mexican rice. If you are making rice start the rice right at the same time the chicken is cooking.

Recipe Notes
If you are making rice start the rice right at the same time the chicken is cooking.
To heat tortillas add 6 to a plate, (that is a microwavable plate ) cover with a paper towel, sprinkle water over the top, and heat for 2 minutes for 6. Remove the paper towel, and serve.
You can keep your chicken, and bell peppers separate or mix them together in the same bowl depending on if you have picky kids or not.
