What’s great about this Steak Carne Asada is easy! The marinated steak recipe with Verde marinade. You can make the marinade, and prep the side dishes ahead of time! Or make it on the same day if you like.

Steak is one of our family favorites and living in Central, California gives you plenty of time for grilling. The weather here has the best, spring and fall seasons! My family loves a nice tender, juicy cut of steak that has been cooked to perfection. What about yours?

This 30-minute meal will have them satisfied and ready for an evening walk, playing games… What’s not to love about a quick dinner that you can serve any day of the week!? Perfect for allowing you more time for fun in your evenings?!

For me, it’s all about making it easier at dinner time. I enjoy creating easy recipes everyone can enjoy! I have a hungry teen at home. Quite often you’ll find me making an appetizer to hold her over. I also love adding lots of fresh vegetables and fruits to our meals. When eating marinated steak this way you can squeeze lime on it. Oh, so good!

What types of steak are used for Carne Asada? 

Traditionally, Carne Asada is made with a flank or skirt steak and sliced thinly. But, you can also use a good steak like sirloin or a Tri-tip roast sliced thinly. 

It is also served with tortillas. 

How To Grill Corn

Let me share how easy it is to make this grilled Mexican Style Corn and Marinated Steak Recipe giving you a juicy and flavorful finish that everyone will love.

  1. Open the corn husks slightly, wash them off and pat dry the corn.
  2. Spread butter and Parmesan Cheese on the corn. 
  3. Then sprinkle the corn with paprika, and fold the husks back on.
  4. Next, put the corn on a microwave-safe plate to microwave.
  5. Microwave the corn for approx 5-8 minutes per corn. (Example 3 corn approx 20 min. on one plate)
  6. Now they are ready to be grilled with husks to cut down the time.
  7. Grill with husks on and for about the same amount of time steaks are being cooked.

We used sweet corn for our recipe but, any corn will do.

Steak Marinade Central, California Style

The steak marinade is easy to make!

  1. Take your garlic cloves and peel them
  2. Slice a quarter to half of your poblano chili pepper
  3. Slice the jalapeno chili pepper  (use gloves and seed chili peppers)
  4. Take a large handful of cilantro with the stems cut off
  5. Add olive oil and oregano.
  6. Toss them into the food processor.
  7. Then squeeze half a lime’s juice and blend until chopped finely but, don’t over-process.
  8. Spread mixture on the steaks and grind black pepper onto the steaks.
  9. Then place the steaks and mixture into a plastic bag (We use food storage bagsfor marinating the steak) or dish covered with saran wrapand refrigerate a minimum of 30-40 minutes up to 2 hours. The longer the better! You can even do this ahead of time. Even the night before. 

Grilled Recipe | Grilled Steak and Corn On the Grill Cooking

Take out the marinated steak. Let the steak get to more room temperature, before putting it onto the grill. Then add to the steak on the grill.

  • NOTE: Toss a plastic bag with extra marinade. Do not use excess marinate, unless you are cooking it as shown in the photo.
  • This recipe makes enough for 4 -6 steaks.

Are you ready to make grilled steak? You will love this Carne Asada Steak! It's marinated in a green (Verde) marinade, then grilled and sliced thinly. This is also known as a Santa Maria style steak. See how to make Carne Asada Verde, grilled corn, and the sides that pair perfectly with your steaks.

Prep Time 45 minutes
Cook Time 16 minutes
Additional Time 10 minutes
Total Time 1 hour 11 minutes

Ingredients

  • 4 Steaks (flank steak, skirt steak, sirloin steak, or tri-tip roast that has been sliced)
  • 3-4 garlic cloves
  • cilantro large handful at least 1/2 cup
  • 1 lime
  • 1 poblano chile pepper and or jalapeno seeded
  • 2 tablespoons olive oil
  • 1 teaspoon oregano

Instructions

  1. Peel garlic and put three cloves in your food processor (or chop finely)
  2. Wash and seed your chile pepper put in your food processor or finely chop
  3. Add the juice of half a lime
  4. Add 2 tablespoons of Olive Oil
  5. Add 1 teaspoon oregano
  6. Next blend all ingredients in a food processor / or if chopped add together and stir.
  7. Then spread over the steaks.
  8. Grind Black pepper onto each steak.
  9. Put into a plastic bag or dish adding extra. If using a dish cover with saran wrap.
  10. Grill your steak on a high heat 8-10 minutes on each side.
  11. Let the grilled steak rest
  12. Slice and serve!

Notes

  • Let steak marinate at least 30 - 45 minutes. 
  • Do not reuse marinade if it has touched the meat or put in the bag. 
  • Spread excess on steaks to be cooked or toss.
  • If you have little kids you can reserve a steak without the marinade. Just salt, pepper and lightly use garlic powder. 
  • This isn't spicy as the peppers have been seeded.
  • Let your steak rest 5 minutes before slicing

    1. Hi Lauren, We used a thin cut tri tip steak (You’ll find them in a roast cut most often) for our steak dinner this night. New York steak and rib eye would be great too. But, honestly any cut of beef would be good with the marinate. Happy grilling!

    1. Hi Joanna, Yes I do! I think you could even use it on fish if you wanted. The herb mixture is very easy to make and would be perfect for any beef, chicken or fish. Hope you get to try it!

  4. I had someone email me about variety of peppers and ask about Serrano chilie peppers. I don’t include in the recipe. I want to say that all peppers comes with a variety of heat to them. Some are milder than others. Pick the peppers that best suit your family and what your accustomed to. My pepper of preference is a milder ones the Poblano, Jalapeno and Aneheim peppers. If you have never used peppers before I’m adding a resource list below to help you!
    Also Use gloves when preparing peppers or I often will stick my hand in a plastic bag and use it as a glove. I seed my peppers prior to using in the recipe. I have this step in the recipe directions but, am repeating it in case someone misses that point.
