Happy Monday! Just in time for your summer entertaining you might enjoy this Corn Salsa Recipe. It’ s the perfect appetizer for when your barbecuing and to accompany your grilled recipes. Toss in a side of chips and serve it right up! We’ve been doing a lot of grilling around here and just plain taking advantage of the milder summer weather we are having this past week. With the exception of a day or two topping 95* all the way up to 106*. Let’s just say there’s been a lot of ice tea drinking along with those days. We even turned on the air conditioner for the first time. But, now let’s get to this appetizer recipe so you can have it next time your having a summer gathering!

You may remember this corn salsa from the recipe I shared with grilled steak with homemade barbecue sauce. I didn’t share my recipe that day and thought you might enjoy this Corn Salsa Appetizer recipe. It’s good to keep the grill masters happy! Simply cook four corn on the cobs. Let them cool and cut off the kernels.

Add to a mixing bowl. Next chop up half an onion I used a yellow onion. Also chop up a little cilantro. We like it a lot I probably used a quarter cup. I crushed one garlic clove, chopped one jalapeno. Tossing each into the bowl when done.

Next just toss in chili powder, salt and pepper to taste. Optional I used 1/4 cup of Parmesan cheese.

Next,  I used a can of fire roasted tomato s. Just open it right up and toss it right in! Next squeeze the juice of one lime into it. Told you this was easy. We enjoyed the recipe with tortilla chips. I’d say this serves up 6-8 people. It gives you a full bowl.

This recipe is adapted from a recipe I found over at SkinnyTaste hers is called Corn Salsa with Lime. I made quite a few changes based on our taste and region. It  was super good and easy to make! I hope you enjoy it as much as we did. As you see you can serve it up as a side dish too. Corn Salsa Fire Roasted Tomato Appetizer

Ingredients

  • 4 Corn on the cob
  • 1/2 yellow onion
  • 1- 2 Jalapeno
  • 1 garlic clove
  • Cilantro
  • Lime
  • 1 14.5 oz can Fire Roasted Tomato s
  • 1/4 cup Parmesan Cheese
  • Chili Powder
  • Salt and Pepper

Instructions
