You guys know how crazy I am about sharing my easy recipes and photography. It’s only in the last few years I started to focus on my food photography skills. There are a lot of foods that are challenging to photograph. Anything raw, meats and eggs…..just to name a few. If you are a foodie and love photography this post is for you. Even if your not a foodie or photographer this post is for you too! Why? Huevos Rancheros Egg Sandwich RecipeI decided to make eggs one morning. Well, really it was brunch time. Nobody in my house eats until brunch time on the weekends. We all drink coffee or tea, catch up on reading or stuff like chores. Oh, the laundry! Then, I head to the kitchen. Typically I try a new recipe or make my own. If it’s two handed Sammie is my back up photographer. Or She’ll do the egg cracking and I’ll do the photographing. It’s a win/win.
We get to spend time together. She learns a little about photography. We all get to eat. Should that be a win, win, win?! Our favorite egg recipes probably are quiche and anything with salsa. Today’s recipe is a deconstructed spin on huevos rancheros.
Let me share how we made this easy egg sandwich recipe.
We love salsa with eggs. Do you? Sometimes when the Mr. is hungry I make just eggs and sausage. But, on this day I wanted to make this more like a non traditional to huevos rancheros egg sandwich.
The thing is it’s the weekend and you can make eggs easily to suit each person in the family. Sometimes I feel like a short order cook. Do you ever feel that way? In a good way though.
Tradional huevos rancheros are with tortillas, beans, pico de gallo or salsa and of course your eggs. Maybe I’ll make that soon to share with you.
Back to the recipe.
- First: Cook up your favorite sausage patties or shape your own from ground sausage, following the directions on the package. Set sausage to the side when cooked and get out your Eggland’s Best Eggs.
Sammie likes her eggs scrambled. The short order cook interrupts this recipe. For scrambled eggs add a couple of eggs per person into a bowl. Then use a fork to scramble the eggs. Add a dash of milk or cream. Pour into your low/medium heated non stick pan. As the eggs start to cook stir with a wood spoon. Add salt and pepper to taste when done.

Eggs Sunny Side Up
For the recipe we use Sunny Side Up eggs. Crack your eggs into the non stick skillet, which already has been heated and has butter melted slowly in it. Toss butter over your egg as it’s cooking. Slow and steady wins the race with sunny side up eggs. Then I toss the French bread baguette that has been cut to sandwich size into the butter and warm it. Or get it as toasty as you like.
Then assemble by first adding the sausage.
Add one or two eggs on top. Toss on your favorite salsa! Hot stuff, right?
Sprinkle with grated cheese and fresh chopped cilantro. Salt and cracked pepper. Serve with a knife and fork if you like. That’s our spin on a deconstructed Huevos Rancheros. It gets all melt-y when you top it. Yummy! Keep your sauce on the side, good!
