This recipe makes about 6 mini strawberry cheesecakes.
If you have a big enough bowl, an immersion blender or Vitamix Blender (like mine), or a big food processor like this one, you can easily double the recipe to serve 12. I made this in small jars; however, it will also set up nicely in a pie plate or in mini pie plates. Use the same amount or double, depending on your dessert needs.
Ingredients for No-Bake Strawberry Cheesecake Minis
Are you ready for a no-bake dessert? Say hello to mini No Bake Strawberry Cheesecake. Just in time for your late spring and summer celebrations. Make your strawberry cheesecake ahead of time and bring it out of the refrigerator for serving your guests. Just in time for Mother's Day, Summer brunches, Father's Day or anytime strawberries are in season and you are craving a no-bake dessert. This recipe is for mini cheesecakes but, it can also be put into a pie dish.
Using a blender or hand-held mixer puree strawberries until you have about 1 cup of strawberry puree.
In a large bowl add the (softened) cream cheese to the strawberry puree and mix. Slowly mix the powdered sugar to cream cheese mixture and mix until light and fluffy. Fold cool whip into the mixture until fully combined,
