Deliciously Easy Chicken Fajitas 30 Minute Meal
Get ready to have a delicious dinner on the table in no time! These easy chicken fajitas are packed with flavor and come together in just 30 minutes in a single pan. With colorful bell peppers, tender chicken, and a squeeze of lime, this skillet meal is a guaranteed family favorite for any busy weeknight.

Chicken Fajitas

With Cinco de Mayo coming up, we thought you might enjoy our chicken fajitas recipe. But this is a recipe you can use any night of the week. Prep is quick, and it's another one of our 30-minute meals.

How to Make Chicken Fajitas

You will need to have these ingredients on hand for making fajitas
Ingredients
- Chicken (skinless, boneless) 1 package
- Garlic powder
- Salt, pepper, paprika
- Olive oil or vegetable oil
- 1 Onion (white or yellow)
- 1 each Red, green, and yellow bell peppers in any combination
- 2 Limes
- 2 Avocados
- 2 garlic cloves
- Cheddar cheese, Monterey Jack cheese, or your favorite Mexican cheese
- optional black beans and jalapeños
If you aren't a fan of black beans, try kidney beans or pinto beans. You can also make this with Mexican rice and a side of corn.
How to cook chicken fajitas
Instructions
First, prep all your toppings. And prep veggies for cooking, then set them aside to use as needed. Keep them in individual bowls.
- Next, shred your cheese and put it in a bowl.
- Slice your limes into quarters.
- Thinly slice all the bell peppers.
- Slice your onions.
- And mince the garlic.
- Peel and slice your avocados (squeeze lime over the top). Set them into a bowl.

Next, take your chicken out of the package. Add the oil to a non-stick skillet and heat it. On medium heat, add your chicken to the pan. Adjust the heat as needed, depending on the stove top you have.
(I have a gas stove.)Now, you:
- Sprinkle a dash of salt, pepper, paprika, and garlic on the top of your chicken breasts.
- Cook on each side 5-8 minutes (depending on the thickness of the chicken) on each side, until cooked, reaching an internal temperature of 165°F.
- NOTE: When you flip your chicken to cook the second side, add some red bell peppers (not all of them) into the pan.
- Stirring the peppers as needed just to add a little more flavor to the chicken.
- Take this all out of your pan.
- Set onto a cutting board, let rest until ready to slice.

Add the rest of your bell peppers, onions, and minced garlic. Cook in oil, stirring until tender. If you like spicy chicken fajitas, add in seeded jalapeños or poblano peppers.
You can also add jalapeños on the side as a garnish if you have small kids who don't like spicy foods.

Slice your chicken. Add it to a serving bowl or plate. Next, serve or assemble the chicken fajitas onto a flour tortilla.
Serve with warmed flour tortillas, corn tortillas, or Mexican rice.
If you are making rice, start the rice right at the same time the chicken is cooking.

If you are making rice start the rice right at the same time the chicken is cooking.
To heat tortillas add 6 to a plate, (that is a microwavable plate ) cover with a paper towel, sprinkle water over the top, and heat for 2 minutes for 6. Remove the paper towel, and serve.

You can keep the chicken and bell peppers separate or mix them in the same bowl , depending on whether you have picky kids or not.
