Recipe For Banana Bread With Blueberries

  • Servings: 8
  • Prep Time: 15 minutes
  • Bake Time: 1 hour

Ingredients

  • 2 cups flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 tsp. cinnamon
  • 1/2 cup of softened butter
  • 1 cup of brown sugar
  • 2 teaspoons of pure vanilla extract
  • eggs
  • 2 mashed bananas (large), peel and mash
  • 1/2 cup of chopped nuts, pecans, or walnuts (optional)
  • 1 cup blueberries (rinsed and dried)

Directions

Preheat oven to 350°F.

Prepare your bread pan and set aside (Pre-spray with non-stick spray and lightly flour. Knock out excess flour from the pan, or use a baking spray with flour.).

Next,

  1. Measure all the dry ingredients into a medium-sized bowl, set aside.
  2. Mix in a larger bowl or your mixer, add butter, brown sugar, and vanilla. Cream them together (using a baking spoon, hand mixer, or mixer), then add in eggs and finish creaming. 
  3. Mash the bananas with a fork and fold in the mashed bananas.
  4. Slowly add the flour mixture to your creamed ingredients, and mix it into the creamed ingredients. Repeat until fully mixed in. Do not overmix. 
  5. Add chopped nuts. Used chopped pecans or chopped walnuts (or omit step if not using nuts).
  6. Lastly, gently fold in your blueberries.
  7. Add to your prepared baking bread pan.
  8. Bake in the preheated oven: 45 minutes to 1 hr 15 minutes. Depending on the oven and altitude. Check often at the 45-minute mark to ensure the top isn’t getting too dark. If it is getting dark, tent with aluminum foil and continue to bake until a knife comes out clean. 
  9. Let cool slightly. Run the knife around the inside edges of the bread pan. Turn the bread out of the pan. Cut when cooled. Serve with or without butter.

  6. Lastly, gently fold in the blueberries.
  7. Bake in the preheated oven: 45 minutes to 1 hour and 15 minutes. Depending on the oven and altitude. Check often at the 45-minute mark to ensure the top isn't getting too dark. If it is getting dark, tent with aluminum foil and continue to bake until a knife comes out clean.

  9. Serve with or without butter.

    Notes

    • Soften the butter in advance. While taking out the ingredients to bake with.
    • Nuts are optional. Pecans are sweeter than walnuts, and both complement the recipe.
    • The standard loaf cut is 8 slices, but you can make them smaller and get more slices from the loaf.
