Recipe For Banana Bread With Blueberries
- Servings: 8
- Prep Time: 15 minutes
- Bake Time: 1 hour

Ingredients
- 2 cups flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 tsp. cinnamon
- 1/2 cup of softened butter
- 1 cup of brown sugar
- 2 teaspoons of pure vanilla extract
- 2 eggs
- 2 mashed bananas (large), peel and mash
- 1/2 cup of chopped nuts, pecans, or walnuts (optional)
- 1 cup blueberries (rinsed and dried)
Directions
Preheat oven to 350°F.
Prepare your bread pan and set aside (Pre-spray with non-stick spray and lightly flour. Knock out excess flour from the pan, or use a baking spray with flour.).
Next,
- Measure all the dry ingredients into a medium-sized bowl, set aside.
- Mix in a larger bowl or your mixer, add butter, brown sugar, and vanilla. Cream them together (using a baking spoon, hand mixer, or mixer), then add in eggs and finish creaming.
- Mash the bananas with a fork and fold in the mashed bananas.
- Slowly add the flour mixture to your creamed ingredients, and mix it into the creamed ingredients. Repeat until fully mixed in. Do not overmix.
- Add chopped nuts. Used chopped pecans or chopped walnuts (or omit step if not using nuts).
- Lastly, gently fold in your blueberries.
- Add to your prepared baking bread pan.
- Bake in the preheated oven: 45 minutes to 1 hr 15 minutes. Depending on the oven and altitude. Check often at the 45-minute mark to ensure the top isn’t getting too dark. If it is getting dark, tent with aluminum foil and continue to bake until a knife comes out clean.
- Let cool slightly. Run the knife around the inside edges of the bread pan. Turn the bread out of the pan. Cut when cooled. Serve with or without butter.

Notes
- Soften the butter in advance. While taking out the ingredients to bake with.
- Nuts are optional. Pecans are sweeter than walnuts, and both complement the recipe.
- The standard loaf cut is 8 slices, but you can make them smaller and get more slices from the loaf.
