  • 1/4 cup of Brown Sugar (light brown or golden brown)
  • 1/4 cup of Flour (all purpose)
  • 3/4-1 teaspoon of Cinnamon Powder
  • 2 Tablespoons of (chilled) Cut up into pieces.

Instructions

  1. Preheat the oven to 325F degrees.
  2. Prepare your bread loaf pan with baking spray and set it to the side. If you have parchment paper cut a size of the pan end to end and overlap it over the sides to help remove the baked blueberry banana bread.
  3. In the large mixing bowl; Cream the butter and sugar together.
  4. Add the pure vanilla extract , eggs, and milk stirring them in with the creamed butter and sugar.
  5. Measure and add all the dry ingredients into the smaller bowl. Slowly whisk them together. Then combine the dry ingredients slowly with the wet ingredients stirring only until combined (butter,sugar,eggs, vanilla, and milk).
  6. Mash the bananas in the empty bowl using a fork. Add it to the mixture combining with a spoon.
  7. Fold in the blueberries (gently). Once everything is combined pour it into the prepared baking pan.
  8. Make the crumb topping in a bowl. Using a fork or whisk to combine the ingredients and add it over the top of the batter in the loaf pan. Add the pan into the oven to bake for 1 hour or 1 hour and 15 minutes (or until done). Use a toothpick to test that it is baked in the center.
  9. Let the bread cool before removing from the pan and serve.

Ingredients

  • 2 cups of Flour (all purpose flour)
  • 1 teaspoon of Baking Powder
  • 1/2 teaspoon of Baking Soda
  • 1/2 teaspoon of Salt
  • 3 Tablespoons of Milk (or Non-Dairy Milk)
  • 1/2 cup of softened Butter
  • 1 cup of Sugar
  • 2 Eggs room temp.
  • 2 teaspoons of Pure Vanilla Extract
  • 3 Ripened Bananas (Peel and Mash with a fork)
  • 2 Cups of Fresh Blueberries

Instructions

  1. Preheat the oven to 325 degrees

  8. Make the crumb topping in a bowl. Using a fork or whisk to combine the ingredients and add it over the top of the batter in the loaf pan. Add the pan into the oven to bake for 1 hour or 1 hour and 15 minutes (or until done). Use a toothpick to test that it is baked in the center.

Notes

  1. Use a baking spray with flour or Pam cooking spray to prepare the pan.
  2. The cooking time is lower than the typical 350 degrees. The time may take a bit longer and is well worth baking at the lower temperature for this recipe.
  3. When Baking - Test the blueberry loaf at 45 min, 60 minutes. If it is jiggly, or a toothpick test comes out with (raw) dough it isn’t done. The Bake time may be longer. It may take up to 1 hour and 15 minutes depending on the oven or altitude.
