Salad With Raspberry Vinaigrette

Mixed Greens Salad With Raspberry Vinaigrette Dressing
Ingredients
- 6 ounces Raspberries
- Organic Spring Mix and Baby Spinach
- 1 Cucumber
- Feta Cheese Crumbles
- Red Onion
- Fresh Beets (prepared)
- Red Wine Vinegar
- Olive Oil
- 1 teaspoon of Italian Seasonings
- Cracked Pepper
- Salt
Alternative Ingredients or Substitutions Can Be
- 12 ounces of Raspberries if you want extras for garnishing
- Pickled Beets
- Arugula, or other lettuce, and salad greens or lettuce.
Instructions
- One week ahead of time make your raspberry vinegar.
Or make it the same day. Note: It might not be as flavorful but, it’s still delicious. (Raspberry Dressing Recipe below) - Add washed dried raspberries in a mason jar, salad dressing shaker, or another clean salad dressing jar, and cover with the organic red wine vinegar. Keep at room temperature (until needed or up to one week).
- Cook your beets ahead of time. Let the beets cool. Then rinse, peel, and cut into bite-sized pieces.
In a hurry try using pickled beets or canned beets. - Rinse the organic lettuce (as needed) and pat dry.
- Peel and slice your red onion.
- Wash and cut your cucumbers.
- Add all the ingredients to the salad bowl (minus any dressing).
- After plating the salad add the raspberry vinegar, olive oil, two pinches of Italian seasoning, cracked pepper, and a pinch of salt. If you prefer; toss the salad with the dressing in a bowl. And adjust the seasonings to your taste.
- Then add Feta cheese crumbles.
- Garnish with big juicy raspberries.

Instructions
- Measure 1/3 red wine vinegar and add rinsed-off raspberries. Let them macerate for a few hours to up to one week. Mash and strain juice.
- Add 2/3 olive oil to the strained raspberry vinegar.
- Next, add the seasonings (salt, cracked pepper, to taste, and 1 teaspoon of Italian seasonings or more, to your taste preference.
- Mix it all together and toss it with the salad!
Adjust flavors as needed to your taste preference. Toss the salad and enjoy!

- If tomatoes are in season they are a great addition.
- Adding pine nuts or slivered almonds is nice too.
