Southwest Chopped Salad – This is a Southwest Salad with black beans, avocado, and corn… It tick’s a lot of boxes, spring salad, summer salad, autumn salad, vegan taco salad… It is healthy, delicious, and easy to make! You can make a homemade dressing or use a bottled dressing.

Southwest Salad
- I prefer not to add the dressing when making my salads. If there are leftovers it will keep better and we can have some for lunch the next day. But, you can toss this salad with dressing if you know it will be used up on the same day.
- For the dressing I used a combination of salsa and a small amount of sour cream (proportioned 3-1 Salsa to sour cream) but, you can substitute it with plain white yogurt to lighten it up or use any of the homemade dressings I list at the end of the post. - If you like crunchy toppings or taco salads add tortilla chips when serving.
- This healthy salad recipe uses fresh corn, lettuce, black beans, avocado, tomatoes, and purple onion… This is super easy to make and probably really quick if you are not taking photos. lol, Give yourself about 30 minutes to prep the salad. Southwest Salad Recipe
Ingredients:
- iceberg lettuce (or other if you prefer)
- baby spinach
- corn on the cob (3)
- avocado (2)
- cilantro
- lime
- red bell pepper
- black beans
- cucumbers
- tomatoes
- purple onion or green onion
Optional toppings:
- tortilla chips
- salsa
- sour cream
- Homemade dressing Or bottled dressing like this Chile Lime Vingrette dressing
How to Make a Southwest Chopped Salad
First, bring water to a boil cooking the corn in a pot of water for 15 minutes. For this salad, you only need three ears of corn.

Next, I washed and chopped the rest of the produce adding it into a bowl to mix. I love my new salad tongs. They are a 3 in 3-in-1 salad-tong. Easy to squeeze together to grip and release when tossing your salads.

Squeeze The Lime Juice Into The Container, Jar, Or Bowl
Set your corn on a cutting board to cool off. Next, drain your can of black beans and add them to the salad. Slice your avocados add them to a bowl and set to the side. the lime. I like my handy lemon-lime squeezer as it catches pulp and seeds. Squeeze the lime juice.
Pour The Lime Juice Over The Avoados To Keep Them Fresh
Pour the lime juice over the avocado and let it sit in the lime juice until it is time to serve. The juice squeezer comes with a lid for storage.
Cut The Cooled Corn Off The Cob
Now it’s time to cut the corn off the cob. I used these handy corn skewers for holding and eating corn on the cob. But, they worked so great for keeping the cob while I cut the kernels off the corn cob. I love how easily they safely store together. Win/win.
Toss The Ingredients In The Southwest Salad
The Southwest Salad is ready for the final tossing. Then place your tomatoes and avocados on top. Serve with or without tortilla chips. For the salad dressing use a salsa, lime, or chipotle dressing…

Instructions
- Bring water to a boil in a pot. Cook the corn in a pot of water for 15 minutes.
- Wash and chopped the rest of the produce adding it into a salad bowl for mixing (reserve the avocado and tomatoes for last).
- Set your corn on a cutting board to cool off.
- Next drain your can of black beans and add them to the salad.
- Peel and slice your avocados add them to a bowl and set to side.
- Squeeze the lime. Pour your lime juice over the avocado in a bowl and let them sit in the lime juice until time to serve.
- Cut the corn off the cooled corn cobs.
- Chop the tomatoes into bite size pieces.
- Add the rest of the ingredients to the salad. Then place your avocados and tomatoes on top.
- Serve with or without tortilla chips. And your favorite Southwest Dressing.
