You will need a cutting board, chef knife, colander, pot, large serving bowl, and salad tongs. To make the salad dressing you will need a salad dressing shaker/container or bowl and a fork.
Ingredients:
- 1 pound penne pasta (or fusilli or rotini)
- 1 pound boneless, skinless chicken breasts
- 1 pound chicken sausage, sliced
- pepper jack cheese cubed
- sharp cheddar cheese cubed
- 1 cup cherry tomatoes, halved
- 1 cup sliced cucumbers
- 1/2 cup sliced green onion
- 1 red bell pepper deveined and chopped
- artichoke hearts (canned or marinated) (optional)
- 4-ounce diced green chilies (optional)
- Barbecue Sauce (optional)
- Salt, Pepper, Garlic – All Purpose Seasoning
- Homemade Italian dressing (ingredients below) or Store bought dressing
Easy Homemade Italian Dressing
- 1/4 cup red wine vinegar
- 1/4 cup extra-virgin olive oil
- 2 garlic cloves, minced
- Salt and pepper, to taste
Grilled Chicken Pasta Salad
Instructions:
- Cook pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
- Before heating the grill clean it. Preheat the grill or grill pan to medium-high heat. Season chicken breasts with salt, pepper, and grill until cooked through, about 6-7 minutes per side. The last few minutes coat with BBQ sauce (optional) Set aside to cool.
(Alternately you can cook the meat on the stove or indoor grill.) - In a large bowl, combine the ingredients: cherry tomatoes, cucumbers, red onion, bell pepper, cubed cheeses, and optional ingredients (chilies and artichoke hearts). Then add the cooled pasta.
- Once the chicken breasts have cooled, chop them into bite-sized pieces and add them to the bowl with the pasta and vegetables.
- Prepare the dressing. In a small bowl, whisk together the red wine vinegar, olive oil, garlic, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat evenly.
- Cover and refrigerate for at least 30 minutes before serving, to allow the flavors to meld together.
- Serve chilled and enjoy your delicious pasta salad with grilled chicken, chicken sausage, cheese, and vegetables!
