Grilled Chicken Pasta Salad

Instructions:

  1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
  2. Before heating the grill clean it. Preheat the grill or grill pan to medium-high heat. Season chicken breasts with salt, pepper, and grill until cooked through, about 6-7 minutes per side. The last few minutes coat with BBQ sauce (optional) Set aside to cool.
    (Alternately you can cook the meat on the stove or indoor grill.)
  3. In a large bowl, combine the ingredients: cherry tomatoes, cucumbers, red onion, bell pepper, cubed cheeses, and optional ingredients (chilies and artichoke hearts). Then add the cooled pasta.
  4. Once the chicken breasts have cooled, chop them into bite-sized pieces and add them to the bowl with the pasta and vegetables.
  5. Prepare the dressing. In a small bowl, whisk together the red wine vinegar, olive oil, garlic, salt, and pepper.
  6. Pour the dressing over the pasta salad and toss to coat evenly.
  7. Cover and refrigerate for at least 30 minutes before serving, to allow the flavors to meld together.

  • 1 cup sliced cucumbers
  • 1/2 cup sliced green onion
  • 1 red bell pepper deveined and chopped
  • artichoke hearts (canned or marinated) (optional)
  • diced green chilies (optional)
  • barbecue Sauce (optional)
  • Salt, Pepper, Garlic seasoning
