Now let me hand you a napkin too wipe up the drooling that may happen from reading about this cookbook. There’s a wonderland of pie recipes in this cookbook and more. But, before I get into sharing a recipe, outline of the book and review, let me give you a little back story of the Norske Nook.
Cookbook:
The Norske Nook Book of Pies and Other Recipes
The Norske Nook, founded as a small-town café in 1973. Now a foursome of revered pie shrines in Osseo, Rice Lake, Eau Claire, and Hayward, Wisconsin. The Nook’s international fame grew from a tradition of Midwest home baking. Informed by Scandinavian roots. Enriched by the luscious ripe fruit, sumptuous sour creams and cream cheeses of America’s dairy land.
More than fifty new pie recipes have been created by the Nook bakers since 1990. Jerry Bechard purchased the Osseo café from founder Helen Myhre. The Norske Nook has won thirty-six blue ribbons at the National Pie Championships in Florida—including three in 2014, for Lemon Cream Cheese, Peaches and Cream, and Jamberry.

Cookbook Review;
Our thoughts on the cookbook:
The book is a hardback book with a lovely cover. Lovely photographs with a little history of the Norske Nook restaurant and bakery in Wisconsin . The images reminded me of our quaint town about 1 1/2 hours south of us Solvang.
There are tips throughout the book. At times even recommending firm store bought fruits or frozen for certain recipes to keep better. Let me say the pies look oh so good! Some of the recipes will refer you back to a specific section for the pie crust, or pudding or topping. There will be page flipping. But, they are easy to find pages indicated for which recipe to follow.
There is a section for sugar free pies. For me the cheesecake section could of been bigger but, the tortes and other recipes made up for it. I do already have a favorite cheesecake recipe. The book finishes with Scandinavian Specialties! I did try the strawberry cream cheese muffins recipe from the book. I’ll be sharing all about that recipe later. I can’t wait to make one of the pies to share with you!
I think if you love to bake, want to learn to bake or are wanting to have a variety of special recipes that this book is going to be a great choice! It’s easy to follow, straight forward recipes. Yummy! Additionally I think this would make a great gift item.
