Today I’m sharing a Peanut Butter Cookies Recipe with you along with a review of Once Again Nut Butters. Have you heard of them? I love using peanut butter in healthy snacks, baking recipes, dessert treats, and our peanut butter cookies. Do you? The peanut butter I used is organic. I had the chance to try four different types of nut butter. I thought I’d tell you a bit about these yummy products and a new staple for my pantry. This was perfect for making today’s peanut butter cookies. PS These are not your run-of-the-mill nut butter(s) or peanut butter. Oh, yum!

Honestly, I haven’t tasted nut butter this good in a long time. I have been a brand hopper when it comes to peanut butter. Never really fell in love with a particular brand and thought peanut butter was just OK. For me, it’s not been a go-to snack, except for the kids. Until now.
I loved these nut butter so much made by Once Again Nut Butters I checked their store locator to see where they are nearby and I found out our local Albertson’s and health food store both carry them. Ya! What if you don’t find a store nearby? You can shop online! You can buy bulk too. Which is pretty awesome for holiday baking or if you run a small business.
Below are just a few of their many other products. But, I’m also excited to try their Natural Wildflower Honey for my other baking recipes and DIYs. I didn’t receive that but, want to grab some soon.
What types of peanut butter do you use in peanut butter cookies?
Once Again Nut Butters
The Once Again Sunflower Seed Butter is made by roasting organically grown sunflower seeds. Let me tell you this mix of milled sunflower seeds, organic sugar cane, and salt is one delicious-tasting butter. So smooth! Hands down, one of my favorites. I made the cookies with Once Again Peanut Butter which uses organic peanuts. They are dry-roasted and milled. Natural oil separation may occur. Just stir your peanut butter. You can refrigerate or freeze this product. It’s gluten-free certified, non-GMO verified, certified organic, Vegan, and Kosher.
Then there is the Once Again Almond Butter. They use organic almonds, the finest they can find. This nut butter is dry-roasted and milled with nothing else. It’s gluten-free certified, non-GMO verified, certified organic, Vegan, Kosher, and Paleo
Lastly Once Again Cashew Butter. again only using the finest organically grown cashews and 5-8% *expeller pressed organic sunflower oil is added to enhance spread-ability. It’s gluten-free certified, non-GMO verified, certified organic, Vegan, Kosher, and Paleo

Easy Peanut Butter Cookies Recipe
Ingredients
- peanut butter like Once Again Nut Peanut Butter 3/4 cup
- butter 3/4 cup to 1 cup
- light brown sugar 1/2 cup
- white sugar 1/2 cup
- 1 teaspoon vanilla
- 1 egg
- flour 2 cups
- salt 1/4 teaspoon
- baking soda 1/2 teaspoon
Instructions

Pre heat oven to 350 degrees.

Add into your large mixing bowl: Butter, peanut butter, light brown sugar, sugar, vanilla and egg. Until creamy and smooth.

In a separate bowl add flour, salt and baking soda. Mix slowly together. Next slowly add this mixture into the peanut butter mixture (slowly creaming it in) until all the flour is mixed in.

Scoop into small scooper and place about 2 inch scoop (balls) onto Silpat (or parchment paper) on a baking sheet.

Take a fork and criss-cross the tops then sprinkle with sugar.

When pan is ready bake at 350 degrees for 12-15 minutes. Until cookies just start to brown.

Remove from oven and let cool slightly prior to adding them to your cooling racks.
Recipe Notes
If your peanut butter is really creamy and soft use a little less butter. If your peanut butter is a thicker use 1 cup butter. Or add 1 extra teaspoon vanilla.
We used 3/4 for ours but, next time I would use 1 cup with the OANPB to see the difference.
Cooking time may vary with Oven and altitude. Check cookies at bake time 10 minutes and again as needed until slightly browned.
