Chicken Tortilla Soup Recipe – Did you know that you can get two meals from one recipe? Use my recipe for making chicken tacos in the Slow Cooker or Instant Pot and use the broth to make chicken tortilla soup. Yes! Get two meals from one recipe.
I’ll show you how to add a second meal to the recipe. Also, I’ll explain how easy it is to convert that into Chicken Tortilla soup for the stovetop (or) to make it in the Instant Pot or Slow Cooker (if you don’t want to make shredded chicken). I have also included a recipe download for only the soup.
Slow Cooker Chicken Tortilla Soup
Use this recipe for Chicken Tortilla Soup as a time-saving hack! It’s perfect for getting two meals from one recipe.
Chicken Tortilla soup is easy to make at home yet, some cooking methods make it quicker and others make it slowly.
I’ve shared quite a few ways to make my Chicken Tortilla Soup. I have listed a few at the end of this post. Perfecting it over time to be so flavorful.
I also have a few shredded chicken recipes. Like this Instant Pot Shredded Chicken. And this Mexican Chicken stovetop recipe.
But, my latest recipe for Slow Cooker Chicken Tacos is most similar to my Chicken Tortilla soup. That is why it is perfect to make soup from it.
- Make the slow cooker chicken tacos recipe. Or use the directions on the post to make it in the Instant Pot (in 12 minutes).
Add a few extra pieces of chicken if you are making the chicken tortilla soup and using the chicken for tacos one night (see notes). - Serve tacos one night and make soup by saving the broth (in a pot) in the refrigerator and shredding or cutting up the extra chicken (or leftover chicken). Warm this up on the stovetop and add the following to the broth.
- Add to the broth; shredded chicken, 1 can of drained canned corn, and 1 can of drained black beans.
- Heat it on the stovetop until warm.
- Garnish and enjoy!
Recipe Notes
- You can make the slow-cooker chicken tacos into slow-cooker chicken tortilla soup without adding extra chicken.
- After the chicken is cooked, during the last 15 minutes of the cooking time. Add the drained canned corn and drained black beans. to the slow cooker until they are heated up.
- You will need to cut up the chicken into bite-sized pieces or shred the chicken meat for the soup.
- Are you making the two-meal hack? Add a few extra pieces of chicken if you are making the chicken tortilla soup and using the chicken for tacos one night. Add extra chicken when feeding 4-6 people. If you are feeding 2 adults you won’t need to add more chicken.

To cook it in Instant Pot set for 12 minutes. To cook on the stovetop give cook time is an hour. Slow Cooker time 4 hours on high.
