For this recipe for fried chicken: I like to prepare the sides before cooking the chicken and gravy. After the chicken is done (set it to the side) you make the chicken gravy in that same pan! All while letting the chicken rest. Serve your favorite sides like mashed potatoes and vegetables of your choice. Enjoy this tasty, satisfying chicken dinner!

Fried Chicken Breasts
If you are looking for an easy way to cook chicken on the stove this recipe is it! This fried chicken recipe is not overly breaded and not deep-fried. It uses no eggs or milk for the breading. It takes 5-8 minutes of cooking on each side to reach the internal temp. for chicken 165 °F – (USDA Food Safe Temperature Chart). Roughly it cooks for about 15 minutes to cook on the stove. Making this a pretty quick dinner.
Adding the sides will add time but, you can also make instant mashed potatoes and open a salad bag if you are in a big hurry!

For me, this type of comfort food always reminds me of Sunday suppers at grandma’s house. But, with a slight change to her recipe, we may have made it a little healthier. It’s not heavily battered and not fried in Crisco. I don’t know about you but for me, fried chicken and mashed potatoes with gravy always scream yummy, comfort food. What do you think??
Cook This Chicken Dinner With Mashed Potatoes and Gravy!
- I’ve broken down the steps and instructions so you can prepare and cook the chicken dinner easily. Using the recipe steps and instructions you need. Starting with making the mashed potatoes because they take the longest to cook.

How To Cook Mashed Potatoes
First, make the mashed potatoes. After boiling the water with the potatoes in it. It will take 15-20 minutes on the stove (recipe below). Or you can make them in the Instant Pot.
I just always make a big batch of mashed potatoes to have leftovers. You can adjust the amount to your liking. Or reduce the ingredients by half. You will need a potato masher like this. Below you can find the instructions for how to cook mashed potatoes.
Ingredients
- 5 lb. russet potatoes
- 8 tablespoons butter (1/2 cup of butter)
- 1 cup of milk
- Salt and Pepper to taste
How To Make Mashed Potatoes
Instructions
- Peel, wash and chop up the russet potatoes.
- Add them to salted water. Bring to a rolling boil and reduce to a simmer. Cook until the potatoes are tender. And you can pierce a fork through them easily.
- Carefully take the pot off the stove (using pot holders) and drain the water off by adding the potatoes into a colander.
- Add the drained potatoes back into the pot.
- Next, add the 1/2 cup of butter and let it melt. Next, add the cup of milk (adjusting it to your preference).
- Mash the potatoes until they are creamy. Then add salt and pepper to taste. Add a lid to the pot, and set to the side until you are ready to serve the potatoes and the chicken is cooked.
Note: If the potatoes aren’t creamy enough or lumpy, add a little more milk and continue to mash time to the desired creaminess you like! Or use a hand mixer. If you are vegan or gluten-free use non-dairy butter and non-dairy milk.
Prep Your Vegetables and Cook Them:
For the vegetables you cook now, is an excellent time to prep them and boil the water (in another pot) to cook the vegetables. We cooked broccoli on this day and it only takes about 7 minutes or less. Cook it just until tender. Drain off the water and keep covered until serving.

How To Cook Fried Chicken Breasts
Fried Chicken Breasts Recipe
Ingredients
- Chicken Breasts (boneless, skinless chicken breasts, or other chicken breasts)
- Olive Oil
- Butter 2 Tablespoons
- Garlic Powder
- Salt and Pepper
- McCormick’s Montreal Chicken – Grill Mates Spice Blend
You don’t have to be grilling to use this yummy herb and spice blend!
If you don’t have the Montreal Chicken seasoning you can make your own seasoning blend. Use garlic powder, onion salt, salt and pepper, paprika, dried parsley, red pepper flakes… The Montreal seasonings have dried green bell pepper too. It is one of my go-to blends for cooking flavorful chicken, pork, and seafood. I highly recommend it if you haven’t tried it. And you don’t have to be grilling to use it.
Instructions
(In A Non-Stick Pan)
- In a medium size prep bowl add the chicken breasts.
- Add a tablespoon of olive oil and coat each side of the chicken breast. Lightly coat the chicken breast with olive oil.
- Sprinkle Garlic Powder, Salt, Pepper, and Montreal Chicken spice blend on each side of the chicken.
- Next, lightly coat the chicken with 2-3 tablespoons of flour (depending on size and how many breasts you are cooking this amount may vary).
- Add 2 tablespoons (approximately) into the non-stick pan, and turn on the stove to medium heat.
- Cook the chicken for about 5-8 minutes on each side.
- When it’s reached the proper internal temperature take it off the stove and add the cooked chicken breasts to a plate.
- Reserve the drippings to make the gravy!
Note: You can use other pans or skillets but, make sure you adjust the amount of oil (as needed) and make sure the pan is heated a little before you add the chicken.
This fried chicken recipe isn’t like grandma’s buttermilk fried chicken, flour, battered and fried in vegetable oil, or Crisco. There is no egg or milk and it’s lighter. You can still enjoy the taste. This is so good, and the chicken is tender! And you still get a bit of that crispiness.
Chicken Gravy
Ingredients
- Drippings from the chicken pan (keep this from cooking the chicken)
- Butter 2 tablespoons
- 1 Chicken Bouillon Cube
- 1 teaspoon of Better Than Boullion Beef Base (roast beef base)
If you don’t have this but, have a beef bullion cube you can substitute it. - Flour 1/4 cup
- 1 Cup of water
- Half and Half
How To Make Chicken Gravy
- Use the pan with the drippings. Have the stove on low/medium heat.
- Add 2 tablespoons more butter to the pan, and let it melt.
- Next, add the flour, stirring it in.
- Slowly, add the water, while stirring and bring it to a gentle boil and reduce it to a simmer.
- Add in the chicken bouillon cube, and beef bullion.
- Next, I added a few splashes of half and half (1/8 cup).
- Cook it for about 5 minutes. Adjusting as needed to have the gravy thicken.
- Season with additional salt and pepper to your desired taste.
If you don’t have time to make gravy, just purchase a packet of gravy mix, chicken gravy in a jar, or au jus brown gravy mix. They are quick and easy to use! Just add them to your Target cart and keep them on hand to use.
Plate the chicken, and mashed potatoes. Make a hole in the mashed potatoes and add the gravy. Add your vegetable side and enjoy! I like cooking this chicken dinner any night of the week and for Sunday dinners just like my grandma did.

- Allow yourself time to precook the mashed potatoes and prep the vegetables, before cooking the fried chicken and gravy.
