Instant Pot Shredded Chicken Breast

Ingredients
- 1 can of tomato sauce with jalapeno (El Pato)
- 1 14.5 ounce can of tomatoes with diced green chilies (or fire-roasted tomatoes if you like spicer chicken)
- 1 cup salsa
- 1 cup chicken stock (1-8 ounce can)
- 3 large boneless, skinless, chicken breasts
(or 1-1/2 to 2lb. of other boneless. skinless chicken) - 3 peeled and crushed garlic cloves
- Salt, pepper 1/4 tsp. salt, 1/2 tsp. pepper
(Make adjustments to taste preference after cooking) - 1/2 tsp. cumin
- 1 tsp. paprika (or chili powder)
- 1 -1/2 tsp. garlic powder
- 1 tbsp. oregano

Instructions
- Add all the ingredients to the Instant Pot (pre-spray the stainless steel pot with non-stick spray).
- First, the large boneless, skinless chicken breasts.
- Then add the canned tomatoes, salsas, and chicken broth.
- Next, add all the spices.
- Place the Instant Pot on the Poultry Pressure Cook Setting (make sure your lid is in the sealed position, sealed) and Cook for 7 minutes for defrosted, refrigerated chicken—or 12 minutes if the chicken is frozen.
- When cooking is finished; Let the Instant Pot countdown and release naturally until the button drops, or for at least 10 minutes. After 10 minutes you can release the pressure if you need it quickly. Or let it completely release it naturally. When the pin drops it’s done depressurizing.
- Remove the chicken breasts from the Instant Pot. Pull the chicken breasts out with tongs or a slotted spoon. Add them onto a cutting board and shred the chicken. Alternatively, you can shred them right in the pot with the sauce. Then remove the shredded meat with a slotted spoon.

To Make Shredded Chicken Tacos
- Add the cooked, shredded chicken for the tacos into warmed soft taco shells (flour or corn), fried corn tortillas, or premade corn taco shells.
