Chicken Soup With Sweet Potato Dumplings Recipe
Hey, hey it’s soup recipe time. Do you love chicken soup? How about chicken soup with dumplings? Here’s how to make Chicken Soup with Sweet Potato Dumplings. We adapted it from a slow cooker recipe to a stove top recipe. Typically I love cooking slow cooker recipes but, on this day I took Sammie to get her driver’s permit.
Chicken Soup with Sweet Potato Dumplings
What?! How is this happening. My baby done gone, and is growing up. I’m scared to death to have her drive, despite seeing 4 other kids go on to become great drivers. Sigh, no turning back now. Our DMV appointment, with an appointment it took hours! You’d think it would be faster?
Despite her finishing the test rather quickly, foot tapping, and waiting for the 1 of 3 clerks to give us the details. She passed! And that’s how the 6 hour slow cooker chicken and sweet potato dumplings turned stove top recipe. So let’s get cooking.
I started with this great cook book with easy to make recipes that I received for free to review, called Sunday Suppers. The day before I had made the classic roast chicken on page 57.
This is a mildly flavored chicken so if you love cooking Mexican, or Italian you might adapt it slightly if making it just for dinner. This comes from my teen, who prefers spicy food.
But, the chicken is perfect for the soup, very juicy, and tender. Any way, that night I just pulled the other half of chicken meat that we didn’t eat for dinner off the bone. I chopped it up, and put it in my glass meal storage container, and into the fridge for the next day for making soup.
I’ve tried two recipes so far, and enjoyed them both. I can’t wait to try a few more recipes, and share them with you. I like their menu plans, desserts, sweet potato cornbread, and other dinner recipes. It has a nice mix of seasonal meal plans in the book. All perfect for Sunday dinners, and gatherings. There are even a few grilling recipes in the cookbook.

How to make Chicken Soup with Sweet Potato Dumplings
Cook your chicken, or you can just grab pre-cooked chicken from the deli, and chop it up if your busy. Making this adapted recipe even easier!
Wash, and chop up your veggies. Peel garlic, then mince it. Peel onion, then chop it up. Add in your herbs, and spices.
Sauté your veggies with spices.
Add in your pre cooked, and chopped organic chicken, and 2-boxes of organic chicken broth. Lid, and simmer while making your dumplings. (I bet you could adapt this recipe, to use with your left over turkey if you wanted.)
Microwave your potatoes on a potato setting. Let cool slightly. Mash them. Add your egg, flour, and Parmesan cheese. Mix up your dumplings, roll them out about an inch or less in a rope shape on a floured board.
Cut them into one inch pieces. Perfection is not necessary. Flour a cookie sheet, because it makes quite a few. Boil water in a separate pot, and boil them 10-13 at a time for about 3-4 minutes (they’ll begin to float). Use a slotted spoon to lift out, set into a bowl or dish.
This was my first time making them, and it was way easier than I thought.
Spoon your soup into a bowl, add your sweet potato dumplings, and garnish with flat leaf parsley. I love a good baguette for serving with the soup. They love dunking. Are you a dunker? Or do you prefer butter?
Either way, you’ll have your dinner served up quickly with this recipe. Because as soon as those dumplings are made your soup is ready. Delish!

Chicken Soup with Sweet Potato Dumplings
Ingredients
- 1 medium yellow onion
- 4 cloves garlic
- 4 carrots
- 3 celery
- 1 tsp. rosemary fresh
- 1/2 tsp. thyme dried
- salt ground black pepper (about 10 grinds) or to your taste
- half a boned chicken or 2-3 chicken breasts cooked and chopped.
- flat leaf parsley
- 2 - 32 ounce organic chicken broth boxes
- For the Sweet Potato Dumplings
- 1 sweet potato
- 2 white potatoes
- 1/4 cup of grated Parmesan
- 1/2 cup white flour
- 1 egg
Instructions

Grab pre-cooked chicken, and chop it up if your busy. Or cook it the night before. See notes if cooking the same day.

Wash, and chop your veggies.

Peel, and chop your onion.

Peel, and mince your garlic.

Sauté your veggies, add in your spices. Add in your chicken broth, and pre cooked chicken. Lid, and simmer while making your dumplings.
For the dumplings

Mix up your dumplings together by adding microwaved peeled potatoes into bowl. Mash them. Add flour, Parmesan cheese, and egg mix well.

Roll them out, and cut them into one inch pieces.

Boil water in a separate pot, and boil them 10-13 at a time.

Spoon your soup into a bowl, add your sweet potato dumplings, and garnish with flat leaf parsley.
Recipe Notes
You can cook your skinless, boneless chicken breasts in olive oil about 7-10 min. on medium/low heat on each side.Take out of the pan when cooked, and chop up to bite size pieces. If thick breasts it may take a little longer. Then follow the soup directions above.
