One thing we love making and eating all year long is a good homemade soup. This is one of those soup recipes I remember having as a kid growing up. My grandparents were always cooking as they were chefs. Can you imagine all the sweet smelling Italian foods being made? We were always in the kitchen. Our family loves Olive Garden but, our new restaurant is 45 minutes away from us. The Italian restaurants in town are expensive being mostly high end. I decided to make my own version of a family favorite adapting a recipe for a Copy Cat Olive Garden Gnocchi Soup.
What’s not to love about making a soup at home, it’s economical, tasty and you don’t have to travel 45 minutes with an added bonus of leftovers! Soups are about the only thing I can get my teen to agree to eat 9 out of 10 times. She just loves homemade soup as much as I do too! Let me share how easy this soup is to make for your family along with our recipe.
Easy Gnocchi Chicken Soup;
Supplies you need to make this soup are similar to a chicken soup with the exception of having on hand half n half and a package of gnocchi. Don’t be afraid to try a recipe with a creamy broth it’s rather easy to achieve. If you need you can cut the recipe in half making a small pot.
The Step by Step for making Homemade Gnocchi Soup;
What’s great about gnocchi is you can keep a package in your cupboard to make this soup any time. Just be sure to use it prior to it’s marked expiration date. Find gnocchi in Target stores they carry the brand Archer. But, my favorite brand is the Gia Russa Gnocchi with Potato this product needs no refrigeration until it’s in your soup. I’ve been dying to try their Whole Wheat Gnocchi with Sweet Potato both these cook in 2-3 minutes and are a product of Italy. Drop them into your soup during the last 3 minutes of cooking just prior to serving up!
The preparation steps are easy for this gnocchi soup recipe;
The first thing you want to do is cook up skinless, boneless chicken breasts in a bit of olive oil sprinkle with garlic powder, cook until done. Set aside, let cool and chop into bite sized pieces.
Next Chop and Saute in a splash of olive oil;
- Chop your veggies carrots 4
- Celery 2 large stalks
- 1 onion
- 3 garlic cloves
After you Saute your veggies you’ll want to make your roux to add to your sauteed veggies use these steps;
- Add approx. 3 -4 tbsp. butter to veggies let it melt and sprinkle 1/4 cup flour on them stirring until thickened on a low simmer.
- Next whisk in the 2 cups half n half stirring until thickened for roughly 5 minutes longer.
- Then immediately pour your 2 pkg. 32 oz. chicken broth into the stock pot.
- Add in Salt, pepper to taste, 1/2 tsp. thyme and 1/2 tsp. Italian parsley or fresh chopped Italian parsley.
Then add in either 1-1/2 cups fresh chopped spinach or a small package of frozen thawed/drained spinach. Cook on a medium low heat about 40 minutes. About 3 minutes prior to serving add in your gnocchi one full package is plenty.
Serve with a salad, bread sticks or french bread. Sprinkle soup with Parmesaen Cheese. Enjoy! Have you ever made homemade gnocchi chicken soup?

- 2 cups half n half

- 1 package of gnocchi
- salt & pepper
- 1/2 tsp. thyme
- 1/2 tsp. fresh chopped Italian parsley or dried Italian parsley
- garlic powder
- Parmigiano-Reggiano or Parmesan Cheese
Instructions
