Hey ya’ll just because summer is over doesn’t mean grilling season is done. It’s not time to tuck those grills away yet. Especially if you live on the west coast. We really are just about to get grilling outdoors more. With the temperatures cooling down and football season heating up it’s the perfect time to grill. We love to grill all year long. What about you? Plus, what’s not to love about fall, tailgating and grilling?
Today I’m sharing some grilled recipes that are easy to make, plate and eat! Which is a touch down for you! Grilling or tailgating this will be one winning meal! Which will leave you with one #LegendaryTailgate
We are grilling chicken thighs, legs, skewers and a special slider recipe! Not to mention a yummy Sweet Potato Pineapple Salad recipe is coming down the home stretch. Hike, Hike… Let, me take you all the way to the goal line with this football fantasy meal!
Sometimes all you need to start with is a simple idea, a grill, chicken and an easy side dish. Why wear yourself out or over complicate things? You want to be able to enjoy the football fun too! Who doesn’t love sliding along to a tailgating football party?

I’m at the fifty yard line and we have a ways to go. I head down to my local store, Albertson’s (& located elsewhere too) where you’ll find in-store Instant Redeemable Coupon for Foster Farms Chicken and Stubb’s BBQ Sauce. Yep, grillers you can find and use these until 12/31/15!
With my Foster Farms chicken, Stubb’s Sticky Sweet BBQ Sauce and other groceries at home I started prepping my meal. Have you tried Stubb’s? Oh, ya this will take you to the 10 yard line quick. Next your wide receiver is about to catch that ball. Let’s take this meal all the way to the touch down! Let’s get this chicken ready to grill!
I added my chicken thighs and legs into a plastic bags. Then I added the Stubb’s Citrus & Onion marinade to my chicken. I cut up thick boneless, skinless chicken breasts, added them to skewers and coated them with Stubb’s BBQ sauce. Covered and sealed in plastic bags, I put the chicken in the fridge for several hours. When ready to grill, pull it all out and discard excess marinade.
How to grill chicken
I barbecued the slider chicken meat on skewers after grilling the chicken thighs and legs half way first. Close the lid after putting chicken on the grill. This will help prevent flare ups.
Grill about 10-15 minutes depending on how hot your grill is. Mine was on a medium heat to start, then lowered slightly.
You want to use a meat thermometer to make sure you just hit the proper grilling temperature for chicken *165 degrees internal temp. and then take it off the grill.
This ensures your meat is fully cooked but, not over cooked. The thighs were so juicy good! Drumsticks 8-12 min. each side, thighs 10-15 minutes each side. (cooking guidelines grilling USDA Food Safety)
The sliders are so easy to make and tasty! Take my play by play, how to image for sautéed honey mustard it will take you to the goal line! Topped with a delicious gorgonzola crumbled cheese. See recipe below. Football flavor for days or should I say you’ll have the apposing team in a daze?!
Recipe for the chicken sliders;
Grilled Chicken Sliders
- •Rosemary & Olive Oil French bread rolls *small size
- •Red onion half per 6 sliders
- •Dijon mustard 1 tsp.
- •Honey 1 tsp.
- •Stubb's BBQ sauce either Sticky Sweet or Honey Pecan
- •Grilled Chicken 2-3 pieces per slider
- •Gorgonzola cheese crumbles
- •Olive Oil
- & lastly Fancy tooth picks to hold them together
1.Slice half a large red onion thinly.
2.Add about 1-2 tablespoons of olive oil to a non stick skillet.
3.Add sliced onions to non stick skillet with olive oil
4.Next add one teaspoon of honey to onions, stir
5.Then add one teaspoon full of Dijon mustard, stir and sauté on a medium low heat
Do not over cook the onions. Adjust heat down as needed.
Cook only until they are slightly soft. Time may vary depending on amount of onions.
Set into a dish, let cool slightly before adding to sliders.
This amount will make up to 6 sliders. Double or triple recipe as needed.
When grilled chicken skewers are done. Take the chicken off the ones with the BBQ Sauce and slice thinner. Add more barbecue sauce to the bottom slice of your pre sliced slider French bread rolls. (I used a rosemary & olive oil French bread rolls)
Next You will add your chicken, sautéed onions and crumbled cheese. I used a gorgonzola crumbles but, you could also use blue cheese crumbles. Put a toothpick through to hold sliders together.
Half a large red onion per 6 sliders. This recipe can be doubled or tripled easily. Don't over crowd onions when sautéing.
Cut grilled slider chicken thinner if needed. You'll need 2-3 slices per slider.
Prepare your slider buns ahead of time by pre slicing them. Store in plastic bag until needed.
I just used a kitchen teaspoon & not a traditional measuring spoon.
The honey was a raw buckwheat honey but, any good honey should be fine.
There is nothing like good BBQ chicken! Drumsticks, thighs, sliders or skewers!
