Easy Turkey Chili

Dear Creatives, Looking for an easy, leaner chili to have for your summer BBQ’s. It is easy to make ahead, reheat or just serve up the same day. The day I made it for the family I just made a small pot of rice & served the chili right over it. This isn’t a hot & spicy chili, it has a nice chili flavor & is perfect for anyone. As always I will share options to spice it up if you like yours a little spicier!

What I like about this recipe is it is what I call easy one pot meals! Use a non stick pot at least 3″ tall.

When you can serve it in one dish it makes clean up so easy! Sorry, not the greatest photos as they were taken late in evening, but had to share this because it is such an easy & good Turkey Chili! It can be easily substituted with beef or toss in other beans & use the basics to create it vegetarian. Trust me this will convert easy. The leftovers of this easy chili were gone the next day. Yummy!

Easy Turkey Chili

Easy! Serve over rice. or just alone with a side salad. Optional top with sour cream or shredded cheese.
Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 11/4 lb ground turkey
  • 1/2 yellow onion or white - peel & chop
  • 2 cloves garlic - peel & chop
  • 1/2 tsp. each of the following:
  • pepper
  • chili powder
  • cumin
  • oregano
  • pinch of salt
  • 2 cooked corn on the cob - cooled cut off cobs or 1 can sweet corn
  • 1 can black beans - rinse & drain
  • 1-14.5 oz diced tomatos
  • 1- 6 oz can tomato paste
  • 12 oz water I just use the empty can of paste to measure
  • 1- 4 oz can diced chopped green chilis

Instructions

  1. Use non stick spray in bottom of pan. Pre open cans. Add ground turkey & cook stirring frequently, toss in onion & garlic continue cooking until onions are translucent. Pour in diced tomato s, tomato paste & 12 oz.water. Add in all your spices. Lower heat to simmer & cover stirring every so often. Continue to cook on simmer at least 30 minutes.

Recipe Notes

To spice it up add 1/2 tsp cayenne or 1 jalapeno chopped.
