Adapt the fall flavors to your taste preference. You can use your favorite homemade tomato sauce but I used a jar of pasta sauce to make this quickly.
Additionally, adapt the seasonings and omit something you don’t have a taste for. I have seen recipes using nutmeg but, that isn’t my preference. This is such a simple pasta sauce to make. And it gives you all the fall feels.

Pasta Pumpkin Sauce Recipe
Serving Size 4
Time: 20 Minutes
Ingredients
- Olive Oil
- 1 teaspoon Chili Powder
- 1/4 teaspoon Paprika
- 1 teaspoon Dried Oregano
- 1 teaspoon Italian Seasoning
- 1 Sweet Potato (peeled and cut into cubes)
- 1 Zucchini sliced into quarters
- 1/2 half of chopped Purple Onion
- 1-2 Garlic Cloves
- 1 Jar of Tomato Sauce – Plus 1 jar of 25 ounces of water after emptying it.
- 1 cup of Pumpkin Puree
- 1-1/2 cups of Water with Chicken Bullion Powder (2 tsp. of chicken bullion powder. Or use the directions on the jar.)
Or use 1 can of chicken or vegetable bullion if making it vegan or vegetarian. - 2 cups of Penne Pasta (farfalle pasta/bow ties, or other pasta noodles of your choice.)

If you are not cooking it in the Instant Pot you will need a large saucepan for making the pasta sauce and a pot for boiling your pasta noodles.

Make this vegetarian or vegan!
To make this pumpkin pasta sauce vegan substitute the chicken bullion for vegetable bullion. Use salt and pepper to taste.
Please note: Remember To Add More Liquid If Adding More Noodles!!
Adding more noodles to the Instant Pot version will require additional liquid (doubling the water and broth) to prevent the Instant Pot from scorching.
If you prefer; You can always cook pasta noodles on the stove (following the package directions). Then use a ladle to spoon the sauce onto the noodles.

- Chop the Vegetables, mince the garlic, and add the chicken bullion to warm water. Set the bullion aside (until needed) and saute the vegetables for a few minutes in the Instant Pot in 1-2 tablespoons of olive oil.
- Add in the seasonings, chicken broth, and tomato sauce, and stir the ingredients. Take the Instant Pot off the saute. Add 2 cups of dried pasta noodles and stir in the noodles.
- Set the Instant Pot for 5 minutes on Pressure Cook. Make sure to seal the value. When done, set the pressure release to let the air escape and pin drop.
- Serve it or add it to a serving dish (or plates). Garnish it with freshly grated parmesan cheese—and chopped parsley. Enjoy!

- Cook the pumpkin pasta sauce on the stovetop by following the same directions for the Instant Pot. But omit the step where you add water to the pasta jar. Cook the sauce on a simmer for about 20-30 minutes, stirring occasionally.
- Cook the noodles: Cook the noodles separately in a pot of boiling water (with salt) according to the package directions.
- Combine: Once the noodles are cooked and drained. Spoon the noodles into a bowl (or plate) and spoon the cooked pumpkin pasta sauce onto the noodles. Garnish, serve, and enjoy!
