Today I have one of several easy appetizer recipes. This is a quick and easy solution for game day appetizers or even an easy dinner. Now who doesn’t love a twofer? I have my favorite quick and easy recipes but, this one is topping my charts for the season! Who is hungry and ready to get cooking? For today’s recipe I made a chili, cheese and green chilies combo. You can make this vegetarian too! If your new here, we are all about Tex Mex cooking. This recipe only takes a few ingredients plus your favorite toppings. Let me show you how easy it is to make taquitos!
Easy Appetizer Recipes
Here’s what you’ll need for today’s recipe:
- 1 can Hormel Chili which comes in many choices, including vegetarian! (use a coupon to get yours)
- 1 cup Sharp Cheddar Cheese or your favorite cheese
- 1- 4 oz. can diced green chilies
- 12 corn tortillas (white or yellow)
- Optional Dipping / toppings: sour cream, avocado, green onion, diced tomato, salsa, pico de gallo…..
This will make 12 taquitos. You can easily double or triple the recipe depending the size crowd your feeding.
What else will you need?
- Non stick cooking spray
- Olive Oil
- Baking Sheet
- Tin foil
- Microwave / Oven
- Paper Towels
- Plate
- Bowl
- Spoon
- Line your baking sheet with tin foil
- Spray your baking sheet with non stick spray
- In a mixing bowl mix the Hormel Chili, 1 cup cheese and diced green chilies
- Next microwave 6 corn tortillas at a time. Set them on a plate covered with a paper towel then topped with a paper towel with sprinkled with a little water. Cook on high about a min. or less depending on your microwave. You want the tortillas pliable.
- One by one fill them with the mixture.
- Roll tightly and face down onto the prepared baking sheet.
- Repeat steps 4-5-6 until done.

Instructions

Line your baking sheet with tin foil.

Spray your baking sheet with non stick spray.

In a mixing bowl mix the Hormel Chili,1 cup cheese and diced green chilies.

Next microwave 6 corn tortillas at a time. Set them on a plate covered with a paper towel then topped with a paper towel with sprinkled with a little water.

Cook on high about a min. or less depending on your microwave. You want the tortillas pliable so you can roll them without cracking them.

One by one fill them with the mixture

Roll tightly and face down onto the prepared baking sheet.

Repeat steps 4-5-6 until done.

Slightly brush rolled tortillas with olive oil.

Bake at 425 degrees until done. About 15-20 minutes
Recipe Notes
This will make 12 taquitos. You can easily double or triple the recipe depending the size crowd your feeding.
Slightly coat with Olive Oil and bake until brown and cooked inside at 425 degrees about 15- 20 minutes. Use a spatula to take them out and place them on a serving dish. After baking, if any of the chili slides out use a spoon to push back into the taquito.
