Easy Chocolate Cookies With Chocolate Chips Iced & Topped
There are so many times when you need a quick baking recipe. Today’s is so easy! Anyone can make this recipe. This is a great recipe especially with party and graduation season is right around the corner. But, is perfect for any time of year! This Chocolate Cake Cookie recipe is so easy and can be adapted to suit your tastes by switching out the type of nuts, seeds or chocolate chips you use.
I can’t think of a time in our family where there is anyone who didn’t love chocolate cookies. For me whipping out a batch for a birthday or gathering is sometimes just as easy as making cupcakes. I really enjoy baking but, sometimes you just need to bake something easy and quick.
What’s great about cookies though is when cooled you can store them in a tin. Bring them to a picnic, party or set them on a pretty plate to serve. No matter how you dish these cookies up I hope you enjoy making them and eating them.

Chocolate Cake Cookies With Pistachios and Chocolate Chips
This baking recipe will yield 18 cookies:
INGREDIENTS
1 box chocolate fudge cake mix (I used Betty Crocker)
2 eggs
1/2 cup vegetable oil
3/4 cup chocolate chips
1/4 cup finely chopped pistachios plus 1/8 cup
1 Betty Crocker chocolate cookie icing pouch
1/3 cup chocolate covered sunflower seeds (multi-colored)

1. Preheat oven to 350°.
2. Line a cookie sheet with parchment paper and set aside.
3. In a medium bowl add the cake mix, eggs and vegetable oil. Mix until well blended.
4. Fold in the chocolate chips and chopped pistachios.
5. Roll dough into 1 inch balls and place on cookie sheet.
6. Bake in 350°preheated oven for 10 minutes.
7. Place cookie sheet on wire rack to cool for 5 minutes.
8. Transfer cookies from cookie sheet to wire rack to completely cool.
9. Ice each cookie with the chocolate cookie icing squeeze pouch.
10. Sprinkle the remaining 1/8 cup finely chopped pistachios onto each cookie.
11. Sprinkle 8-10 sunflower seeds on top of each cookie.
12. ENJOY!!

I don’t think I’ve ever made chocolate chip cookies with pistachios and I like the idea. I just prefer make them from scratch….
