Chicken Salad Sandwich Recipe – We enjoy making and serving chicken salad. Topped onto a salad or made into chicken salad sandwiches. Do you? This recipe ticks quite a few boxes. It’s easy to make, and quick because you can use leftover pre-cooked chicken or rotisserie chicken.
You can make and serve this for brunch, lunch, or dinner any time of the year. It’s easy to double the recipe if you need a larger quantity.
Chicken Salad
Gather the classic chicken salad ingredients such as cooked chicken breast, celery, onion, mayonnaise, and seasonings such as salt and pepper. We like adding diced red bell pepper and a squeeze of lemon to ours but, this is optional.
It’s so easy to make this recipe for chicken salad! And by adjusting the ingredients you can adapt the taste to fit your tastebuds and to your family’s liking.

Chicken Salad Sandwich Recipe
Ingredients
- 1 lb. of Chicken Breast (pre-cooked)
- 1/2 of a Red onion
- 1/2 of a Red Bell Pepper
- 2 stalks of Celery
- 1/4 lemon
- 4-5 tablespoons of Mayonnaise
- Salt and Pepper to taste
- Bread or Crossiants (if you are making sandwiches)
- Lettuce or baby spinach
- Optionally you can add sliced tomatoes
You can find pre-cooked shredded chicken at Target and grocery stores. Add these items to your Target pick-up order and make dinner easily!
For kitchen supplies, you will need a cutting board, a chef’s knife, a medium-sized bowl, and a mixing spoon or spatula.
How To Make Chicken Salad
Instructions
- Chop the pre-cooked chicken breast into small bite-size pieces.
- Wash and chop the bell pepper and celery.
- Peel and finely chop the red onion.
- Add all the ingredients to the mixing bowl.
- Squeeze in the juice of 1/4 lemon and add in mayonnaise.
- Combine all the ingredients.
- Then add salt and pepper, stirring it in, and adjust to your liking.
- Assemble the sandwiches. You can add a bit of mustard or Dijon mustard to the bread if you like.
Serve the prepared chicken salad on a bed of green salad or make sandwiches with the chicken salad as we did on this day.
