Recipe For Easy Chicken Parmesan
Using pizza sauce is a shortcut I have used. Note some pizza sauces are thicker than others. You may need tomato paste to thicken it depending on the product. Having and using a thicker tomato sauce ensures it doesn’t run off the chicken.
Ingredients
- Chicken (boneless, skinless chicken breasts)
- Mozzarella cheese
- Fresh Basil or Italian Parsley
- 1-2 Egg (s)
- Italian bread crumbs
- Pizza Sauce or Tomato Sauce With Tomato Paste
- Olive Oil Spray or Olive Oil
- Salt and Pepper
- Garlic powder

Preheat the oven to 425F
- To make chicken fillets; Cut the thick chicken breast down the center. Pound the chicken breast with a meat mallet to tenderize if desired.
- Prepare a sheet pan by spraying it with olive oil (I like lining it with aluminum foil and then using olive oil to keep the clean up quickly).
- Bread the chicken by, cracking a few eggs in a bowl (with a pinch of salt and pepper), and putting some Italian bread crumbs ( add 1/4-1/2 tsp. garlic powder) on a plate or wide bowl. Dip the chicken in the eggs and coat the chicken with the bread crumbs on both sides.
- Lay the breaded chicken onto the prepared sheet pan (lined with foil, and sprayed with olive oil).
- Bake the cutlets for about 5-8 minutes on each side. Then, spoon the tomato sauce (or thicker pizza sauce) onto the chicken breasts and add freshly shredded mozzarella cheese, and chopped basil or Italian parsley. Continue to bake in the oven until the chicken has reached 165F internal temperature and the cheese is melted (this may be a few minutes or longer depending on the thickness of the chicken).
- Garnish the Chicken Parmesan with additional freshly chopped basil or Italian parsley.

What garnish to use in Chicken Parmesan?
You can use either chopped basil or Italian parsley based on your flavor preference.
- The chopped basil is sweeter, and zesty, and gives it a bright flavor. It also compliments the tomato sauce.
- The chopped Italian parsley is the more traditional choice for the recipe. It has a milder and neutral flavor.
Both work well in the recipe for chicken parmesan. The garnish gives it that pop of color making the food look even more appetizing.

- Use a meat thermometer to test the internal temperature of the chicken. Do not overbake it can dry out the chicken fillet.
- Use pizza sauce or tomato sauce with tomato paste to thicken it up.
- The recipe is easily doubled if you need more servings.
- Serve this dinner idea with pasta and vegetables (zucchini or bell peppers...) or a tossed green salad with Italian dressing.
