Dear Creatives, I have many versions of guacamole that I make, but somehow this seems to be the one the family eats up the quickest! So I thought I would share how simple of a recipe this is! You can use this guacamole to eat with chips, crackers, add to tacos, top enchiladas, top burgers or toss into a green salad. Add something else sure! But, this is the easiest,  yummiest & is so simple to make.

Simple guacamole requires fresh ingredients to be at it’s best!

 

With a few ingredients from the farmers market, fruit stand or store. It is basically a wash, peel, chop & squeeze away from being done!

I love serving my Simple Guacamole in a glass dish so you can see all the fresh goodness! Another item I love in my guacamole is cilantro, but shh don’t tell the guacamole I didn’t have any on hand! Now for the Simple Guacamole Recipe!

Simple Guacamole

Easy! Add Cilantro & to spice things up one chopped Jalapeno if desired!

Ingredients

  • 1-2 Avocados
  • 1 ripe tomato
  • 1/2 red onion
  • 2 cloves garlic
  • 1 lime
  • Salt & Pepper to taste

Instructions

  1. Peel & chop avocado (s)
  2. Chop: Tomato, red onion, garlic
  3. Squeeze in fresh lime juice
  4. Salt & Pepper to taste

One of our favorite family recipes for appetizers puts a spin on this easy to do recipe by Giada De Lorentiis at Food Network. We just leave out the mint.  An option that we have done  is to add in a small amount of  cooked Italian sausage without casings, drained to the mixture. They are seriously bite sized bits of heaven. There is even a video to show you how easy it is to prepare.

Stuffed Mushrooms:

  • 1/2 cup Italian-style dried bread crumbs
  • 1/2 cup grated Pecorino Romano
  • 2 garlic cloves, peeled and minced
  • 2 tablespoons chopped fresh Italian parsley leaves
  • 1 tablespoon chopped fresh mint leaves (* we leave this out)
  • Salt and freshly ground black pepper
  • 1/3 cup extra-virgin olive oil
  • 28 large (2 1/2-inch-diameter) white mushrooms, stemmed

Directions: Preheat the oven to 400 degrees F.

Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend. Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.
