One Pot Chicken Fried Rice an Easy 30 Minute Meal
I don’t know about you but, when I find an easy recipe that everyone loves I’m doing a happy dance. Today’s fits into two categories 30 minute meals, and easy chicken recipes.This recipe is a chicken, vegetable, stir fry, and finishes cooking with the rice all in one pot! The end result tastes exactly like Chicken Fried Rice.
One Pot Chicken Fried Rice
We have been working on projects behind the scenes. Doing some deep cleaning. Painting, and fixing up my office work space. Can I just get a professional organizer in my home? lol Oh, wait that is suppose to be me.
As a parents we juggle all things. Right? I’m always up for making a good homemade meal but, love finding quick, and easy easy recipes to toss into my list of meal planning recipes. Because some days you just don’t have time for that!
Why do we love this 30 minute chicken, vegetables, and rice dinner?
I spotted a recipe, and adapted it to suit our families tastes. We have one teriyaki lover, and two soy sauce lovers. We love Asian foods but, I rarely cook them at home. (although I’d love to try more) We typically eat out at our favorite spot, and this recipe reminds me of our favorite Chinese restaurant’s fried rice with chicken, minus the egg.
This chicken vegetable rice is such an easy dinner idea that your sure to love. It can be adapted to vegetarian by omitting chicken, and using vegetable broth. If you want fish instead of chicken try using a frozen shrimp for convenience. I’d cook it separate per package directions, then add to recipe at the end.

How to Cook Chicken Fried Rice
- Start by washing, and chopping red, and green bell peppers
- Peel and chop your ginger
- Peel and chop your garlic
- Cut up your skinless, boneless chicken breasts. (do NOT use the same cutting board for cutting vegetables that you cut your raw meat this can cause cross contamination)
- Heat up your non stick pan (that has a lid) add olive oil or sesame seed oil. Add your chicken, lightly brown on all sides.
- Next drop in your veggies
- Mix the vegetable with the chicken a cook several minutes
Add pepper to your chicken. Make it a pinch or add more like we did.
Add in your rice.
Add in your soy sauce, and chicken broth. Stir together. It will look like a lot of water but, the rice will absorb it.
Cover, bring to boil then reduce to simmer. Cook for about 15-20 minutes, stirring at least once checking liquid level. During the last 10 minutes add your frozen vegetables, stir and finish cooking until your rice is tender.
Garnish with thinly sliced green onion.
Use a fork or chopsticks. Watch them eat, and eat. Ahhhh.
Chicken Fried Rice Recipe
One Pot Chicken Stir Fry
Ingredients
- Boneless skinless chicken breasts or a package of pre cut boneless chicken cubes
- Rice 1 cup we used Uncle Ben's White Rice
- Soy Sauce 1/2 cup
- Olive oil 2 tbsp.
- 1 red bell pepper
- 1 green bell pepper
- organic baby carrots cut into bites size pieces 1 cup
- 2 large cloves of garlic
- 1 fresh ginger
- Frozen corn and peas 1 cup each
- 1 cup chicken broth = one small can of chicken broth 14.5 oz
