Minestrone Soup Recipe

Dear Creatives, Happy Monday to you! I am glad to whisk my weekend under the carpet. Why you ask? Well the Mr. was home sick with a terrible cold, miserable & us hoping we don’t catch it. Mr.s are never happy campers when they are sick. My weekend was filled with soup making, laundry and tending to things on the home front. Now for the tasty Minestrone soup recipe that made everyone feel a little better.

This is my recipe & my way of making Minestrone soup is similar to Rachel Ray’s recipe. So let me share what I did to make a simple soup packed with veggies and goodness .

Ingredient / shopping list:

3 cloves garlic

1 onion

3-6 carrots depending on size

1 celery stock

1 poblano chili

2 zucchini

1 package 12 oz green beans * you can use 1/2

1 cup spinach * you can use more that is all I happened to have on hand

1 large chicken or vegetable stock

1 small can of tomato sauce

Italian seasoning

3 bay leaf

salt & pepper

2 cups noodles * sea shell or penne

1 15 oz can cannellini beans, or kidney bean or garbanzo beans

Directions:

I sauteed  3 garlic cloves and 1 onion together.

Chopped up 6 smaller full size carrots, 1 celery stock, 1 poblano pepper and when the onions and garlic were clear I added  chopped ingredients  into the pot.

I stirred them for about 3- 5 minutes to just get them flavored & start softening with the  garlic and onion. Then I added 1 large box of chicken broth, 1 small can of  tomato sauce approx. 4oz and stirred.

Let those ingredients simmer for 10 min. Then add 3 bay leaf, 2 tsp. Italian seasonings, a dash of salt & some pepper. Cook another 10min.

Then I added already prepared *washed & cut green beans 12oz., about a cup of spinach , zucchini.

I use what I call sea shell noodles I add 2 cups & also rinsed 1 can cannellini beans *( or kidney bean or garbanzo beans whatever one of these you have on hand will work)

Now just cook until shells are tender and its ready to serve up.

This can serve 4-6 depending on serving size. Total prep and cook time approx 1 hour. We had left overs for a second day.
