Meal Plan Monday: Quick and Easy Spring Dinners Week Plan 1

Happy Monday! I rounded up some new recipes to try this week. One was recommended by one of my daughters. I love it when I find out about a recipe that is great, it gives me incentive to try it myself. Quite a few of these recipes are new to me but, I tossed in one of our favorite fish taco recipes with avocado sauce. I can’t wait to try the new ones and let you know how they turned out for me! But, in case you want to jump ahead and try them with me you can with this week’s meal plan!

Monday:

A simple Steak recipe Easy Marinated Sirloin Steak with green beans and left over noodles. You can add potatoes if you didn’t have a pasta dish last night with left overs.

Tuesday:

South West Chicken Chopped Salad with Chipotle Honey Dressing  Spring is the perfect time for eating more salads. I have seen a few of the South West Chicken Salad recipes with Avocado Buttermilk Dressing. I’m on the fence on the dressing I’ll pick. I love the idea of a spicy honey mustard, but am not a huge fan of Chipotle flavoring. I promise to share what spin I put on my dressing mix, along with how I liked it.

Wednesday:  

Sammie gets out of school early on Wednesday’s so I thought it would be fun if we made homemade pizza dough. This week I’m trying a whole wheat dough and we are making a Whole Wheat Pesto Pizza. If you have kids at home making dough is always great fun for them. Helping mix, letting it rise & then all hands on deck for pizza making fun! We are using this Pesto Pizza  recipe. I got quick rising yeast to speed things up. Left over pizza is great for lunch the next day.

I’m going to try making my own recipe inspired by this Skinny Broccoli Chicken Casserole. Why change it? Well, to be honest I am not a huge casserole person. The cream of mushroom soup isn’t something I care for but, the idea of creating something similar is something I’d would like to try. Thursdays I spend a lot of time driving to – from school, lessons and back so a baked dish or crock-pot dish is a great solution. One I found  and made that didn’t have noodles was this Autumn Chicken Casserole recipe (the veggies are zucchini, onion, red bell pepper, yellow summer squash fall colors that’s how it got it’s name)  But, you can make it anytime & with seasonal veggies. I love that it’s mix in one bowl, bake in one dish & done!Everyone in our house loves it.

Friday: 

A lot of times we just get pizza but, just in case we don’t I always have some frozen talapia in the freezer or we grab some fresh cod and make fish tacos. I have a really good and easy recipe I use Fish Tacos with Avocado Sauce  This week I know I’ll be making fish tacos since we already have pizza on Wednesday and if there aren’t any casserole left overs. If there are left overs yippee & I only have to re-heat! Then it’s moved to Saturday on this week’s meal plan.
