Pumpkin Oatmeal Cookies – Gluten-Free
Makes 24 cookies Prep time: 1 hour 15 minutes Cook time: 12 minutes
Scoopa rounded tablespoon of batter onto the lined baking sheet, leaving an inch to an inch and a half between each cookie.
Bake for nine to 12 minutes, or until the bottom of the cookie has just begun to brown.

Pumpkin Oatmeal Cookies- Make bake a batch of cookies anytime you are craving tasty cookies to eat. These are Gluten-Free pumpkin cookies recipe but, easily adaptable. Whisk together the melted butter, white sugar, and brown sugar until the sugar is fully dissolved. Add the egg, vanilla, and pumpkin. Whisk to combine.
Add the salt, cinnamon, pumpkin spice, baking soda, and half the flour. Whisk to combine. Stir in remaining flour.
Fold in the oats until just combined, then fold in the chocolate chips until mixed.
Cover and refrigerate for at least an hour.
When ready to bake, preheat the oven to 350 degrees and line a baking sheet with parchment paper.
