This is my daughter's most requested cookie recipe. Today, I thought I'd show you how easy the steps are to make these cinnamon sugar cookies, called Snickerdoodles. If you have never made them, this is a must-try cookie recipe!

How to Make Easy Snickerdoodle Cookies

Ingredients

  • 2 3/4 cup Flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 cup soften Butter
  • 1 1/2 cup Sugar white granulated
  • 2 tsp. Vanilla
  • 2 eggs

  • 1/3 cup granulated sugar
  • 2 tsp. ground cinnamon

Make adjustments to the cinnamon sugar coating to your personal preferance.

Step-by-Step Instructions

Step 1: Start out by making the cookie dough.

If you don't have a mixer. Use a larger mixing bowl and a pastry cutter. Have a second bowl handy for your flour. 

First, cream your one cup of butter, and 1 1/2 cups (granulated) sugar together

Step 2: Remove creamed butter from your mixing blades. I use my spatula to do this. When hand mixing, it has a bowl rest, which is a nice feature. 
 
Step 3: Next, add your 2 eggs and 2 tsp. vanilla extract.

Step 4: Mix until completely mixed.

Step 5:

In a separate bowl, measure out and add

  1. 2 3/4 flour
  2. 1/2 tsp. salt
  3. 2 tsp. baking powder

Carefully, mix with a whisk or fork.

Step 6: Slowly add your flour mixture to your creamed butter and egg mixture. I use an ice cream/cookie scoop with trigger action for this. Add slowly, until all the flour is added.

Step 7: Mix well, but don't overmix. Your dough will look like this. 

Step 8:

In a separate mixing bowl, make cinnamon sugar coating for cookie dough.

  1. 1/3 cup (granulated) sugar
  2. 2 tsp. cinnamon

Mix sugar and cinnamon well. Shape your dough balls, and coat with sugar, then flatten. Then follow the steps below.

Step 1. I use a smaller scoop to keep cookie ball amounts equal in size. Roll into balls until you have your non-stick sheet pan filled with them.

Step 2. Then one by one, after smoothing the rolled ball, dip each rolled cookie dough ball into the cinnamon-sugar bowl.

Step 3: After they are rolled and coated with sugar. Flatten each cookie with the bottom of a cup or small bowl.

Step 4:

Repeat this process if needed for a second tray of cookies.

When done, add to the preheated oven at 400°F for about 12-15 minutes. Don't overcook.

Let cool on baking cooling racks, and serve or store in a cookie jar.

Ingredients

  • 2 3/4 cup Flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 cup soften Butter
  • 1 1/2 cup Sugar white granulated
  • 2 tsp. Vanilla
  • 2 eggs

For the Cinnamon-Sugar Coating

  • 1/3 cup granulated sugar
  • 2 tsp. ground cinnamon

Instructions

  1. Preheat the oven to 400°F. Line baking sheets with parchment paper or use nonstick baking sheets.
  2. In a large mixing bowl, cream together the softened butter and 1½ cups granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract. Mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  6. In a small bowl, combine ¼ cup granulated sugar and 1 tablespoon cinnamon for the coating.
  7. Scoop the dough and roll into balls. Roll each dough ball in the cinnamon-sugar mixture until fully coated.
  8. Place the coated dough balls on the prepared baking sheets, leaving space between each cookie.
  9. Bake for 12–15 minutes, or until the edges are lightly golden. Do not overbake.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store in an airtight container for up to 1 week (2 weeks may be optimistic unless you've tested that).
  • This recipe makes about 24 cookies. Adjust sugar and cinnamon ratio to your preference.
  • Smaller cookies will bake faster.
  • Double the recipe for larger gatherings.
