What makes this slow cooker chicken recipe a go-to is how simple it is to prepare. Just add all of your ingredients to the crockpot, set it, and you’re free to go about your day. It’s an easy, one-pot dinner that only requires you to make rice to serve with it when you’re ready to eat! For the best results, we recommend using organic, skinless chicken breasts for this recipe.
There is no pre-cooking of your chicken needed for this recipe. The slow cooker will do all the cooking for you.

Slow Cooker Pineapple Chicken Recipe
Ingredients for Pineapple Cashew Chicken
Boneless Skinless Chicken Breasts For this recipe, I used Foster Farms®Simply Raised Chicken Breasts, which I found at my local grocery store.
Then add your chicken breasts (boneless) to the slow cooker.
Sprinkle each breast with poultry seasoning.
Add 3/4 cup of pineapple juice from the pineapple chunks can.
Then, add half a cup of soy sauce and one cup of the pineapple chunks into the crock pot.
Next, add 1/4 cup of the cashews into the slow cooker.

Set The Slow Cooker On a Low Heat
Check the internal temperature of the chicken before the cooking time is up!
Cooking the cashews will give the dish additional flavors. You can add more cashews after cooking, for garnishing and crunch!
At about 3 hours, use a thermometer to check the internal temperature.
You will not need to cook it for the full four hours (especially if you are using thin cuts of chicken).
Slow Cookers/ Crockpots on low are set to 4 hours (typically).
You will want to cook the chicken only until the chicken is fully cooked with an internal temperature of 165°. Once the chicken reaches 165°F, it is finished cooking.
Recipe Tips
Overcooking the chicken can dry out the meat.
For thicker cuts of chicken, it may take longer. Just ensure you get the proper internal temperature reached. Then it is ready to serve.
For thin cuts of chicken, it may cook more quickly. It is important to pull out the chicken and temp it as it cooks (around 1-2 hours).
When the pineapple chicken is done, plate the dinner by adding your pineapple ring to the plate, rice, and then spoon your cooked cashew chicken with pineapple on top.
Sprinkle with additional cashews for garnish.
If you like, you can also add chopped green onions to garnish the dinner.

Ingredients
1 lb. - 1-1/2 lb. Skinless Chicken Breasts
1 Can of Pineapple Chunks
1 Small Can Pineapple Rings
1 Red Bell Pepper
1 Jalapeno
Teriyaki sauce
Poultry seasoning
Cashews
Rice
Instructions
Spray your slow cooker or crockpot with a nonstick spray such as Pam.
Add your boneless skinless Chicken Breasts into the crock pot.
Sprinkle each breast with poultry seasoning.
Add 3/4 a cup of pineapple juice from the pineapple chunks can.
Then add half a cup of Teriyaki sauce.
Measure and add a cup of the pineapple chunks into the crock pot.
Next, toss in 1/4 cup of the cashews. You can add more later, the ones that cook will be softer but, give the dish flavor.
Wash the red bell pepper and jalapeno.
Carefully seed the jalapeno and chop it.
Seed, and slice the red pepper.
Add both to the crock pot then lid and cook until the chicken is done.
About 20-30 minutes before the chicken is done make the rice according to the directions on the package.
When the chicken recipe is done: add the cooked rice to the plate. And plate the dinner by adding your pineapple ring to the plate then, layer your cooked ingredients on top.
Garnish by adding and sprinkling with extra cashews.
