There is nothing I love more than apples. Fall is the perfect time to make an apple cake. This recipe is super easy because it’s partly hacked using a cake mix. But, we share a good yellow cake recipe too. Just in case you don’t want a short cut.

I used to have an apple tree when I lived up north. I miss the days of apple picking, making pies, canning, and freezing. Every now and then I have to put my spin on an apple dessert. Today’s recipe is an easy apple cake. Are you ready to elevate your cake mix with the flavors of fall?

Some of my older kids favorite memories are when I would peel fresh apples, and core them out, stuffing them with brown sugar and cinnamon. Making baked apples. But, today I am sharing this apple cake with brown sugar, and cinnamon. 

Basically, the yellow cake batter is your base. You may remember when I tried the Immaculate Baking Brownie Mix. I had also received a Yellow Cake Mix from them and decided to use it for this recipe.

 Start with a yellow cake mix

How to make an apple cake

  1. Peel a few apples and chop them up
  2. In a bowl measure out a quarter cup of brown sugar, set to the side
  3. First, spray your pan with non-stick coating
  4. Slightly flour sides of the pan and shake out excess flour
  5. Next layer half the batter into an 8 x 8-inch pan
  6. You are going to add your apples into the batter
  7. Then sprinkle the apples with cinnamon
  8. Next, add the quarter cup brown sugar
  9. And top with the rest of the batter

You are going to bake the cake in the oven according to your recipe directions. 

Baking Tips

  1. During the last 20 minutes, you’ll want to check how it’s baking.
  2. You may have the top cooking faster than the inside.
  3. If so you can slightly cover with foil (tent) and continue to bake until you check the mixture with a knife and it comes out clean.
  4. You don’t want to over or under bake this so you’ll have to keep an eye on it.

When cooled go along edges of the pan with a knife to loosen edges and flip over onto a dish.

I decided to cover my cake with melted caramels.

I don’t have a double boiler but, I melted them slowly with a touch of water stirring until fully melted. Then I poured the melted caramel sauce over the cooled cake. When caramel frosting is cooled it is ready to serve.

Serve with vanilla, toasted almond or any other ice cream you think you’d enjoy with it. But, it’s delicious by itself. It had a subtle hint of cinnamon, the sweetness of brown sugar, a moist batter and delicious caramel topping.

Apple Cake with Caramel Topping

Are you ready to elevate a cake box mix? Try making this Apple Cake. But, we share a yellow cake mix if you want to make your cake from scratch too. Apples, caramel frosting, a hint of cinnamon. All the flavors of fall and so easy!

Prep Time 10 minutes
Cook Time 30 minutes
Additional Time 15 minutes
Total Time 55 minutes

Ingredients

  • 2-3 apples
  • Yellow Cake Mix or Supplies for making the yellow cake recipe from scratch
  • Brown sugar
  • Cinnamon
  • Caramels or Dolce de Leche

Instructions

  1. Make a yellow cake mix or yellow cake from scratch
  2. Peel a few apples (2-3) and chop them up.
  3. In a bowl measure out a quarter cup of brown sugar. (1/4 cup)
  4. First spray your 8 x 8 inch pan with non stick coating
  5. Slightly flour sides of pan and dump excess flour
  6. Next layer half the batter into a 8 x 8 inch pan
  7. Your going to add your apples into the batter
  8. Then sprinkle the apples with cinnamon (I don't measure I just cover them lightly)
  9. Next add the quarter cup brown sugar over the apples
  10. And top with the rest of the batter
  11. Bake as the packaged mix or yellow cake directions say but, watch the last 20 minutes. Cover top with tin foil (lightly tented) if browning but, the middle still needs cooking. 
  12. Test to see if your cake is done.
  13. Bake until knife or toothpick comes out clean.
  14. When cake is cooled remove from pans.
  15. Serve or Frost your cake.
  16. Use store bought frosting or melt caramel in a double boiler and drizzle over the cake.
  17. Serve when cooled.

Notes

  • If baking cake from scratch use recipe in blog post and make sure you have the ingredients on hand.
  • Use the baking time on the box for the size pan you are using. Adjust time up or down as needed.
