One-Pot Chicken and Rice
We have been working on projects behind the scenes. Doing some deep cleaning. Painting and fixing up my office workspace. Can I just get a professional organizer in my home? lol Oh, wait, that is supposed to be me.
As a parents, we juggle all things. Right? I’m always up for making a good homemade meal, but love finding quick and easy recipes to add to my list of meal planning recipes. Because some days you just don’t have time to cook a complicated dinner.
Why do we love this 30-minute chicken, vegetables, and rice dinner?
I spotted a recipe, and adapted it to suit our family’s tastes. We have one teriyaki lover and two soy sauce lovers.
This chicken vegetable rice is such an easy dinner idea that you’re sure to love. It can be adapted to be vegetarian by omitting chicken and using vegetable broth. If you want fish instead of chicken, try using a frozen shrimp for convenience. I’d cook it separately per package directions, then add to the recipe at the end.

What’s Inside This One-Pot Chicken and Rice?
Ingredients
- Boneless skinless chicken breasts or a package of pre cut boneless chicken cubed
- Rice 1 cup we used Uncle Ben’s White Rice
- Soy Sauce 1/2 cup
- Olive Oil 2 tbsp.
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- Organic Baby Carrots cut into bites size pieces 1 cup
or regular carrots, peeled and cut - 2 large Garlic Cloves
- 1 Fresh Ginger
- Frozen Mixed Vegetables: Corn and Peas 1 cup each
or 2 cups frozen mixed Vegetables - 1 cup Chicken Broth = one small can of chicken broth 14.5 oz
- Spices: Pepper
You can use any frozen vegetables your family enjoys eating: green beans, broccoli, and mixed vegetables in any combination.
How to Make One-Pot Chicken and Rice
Instructions
- Start by washing and chopping red and green bell peppers
- Peel and chop your ginger
- Peel and chop your garlic
- Cut up your skinless, boneless chicken breasts. (Do NOT use the same cutting board for cutting vegetables that you cut your raw meat this can cause cross-contamination)
- Heat your non-stick pan
(that has a lid), add olive oil or sesame seed oil. Add your chicken, lightly brown on all sides.
- Next, drop in your veggies.
- Mix the vegetables with the chicken a cook for several minutes. Slightly browning the chicken (as in image 4 above).
Add pepper to your chicken. Maybe add a pinch or add more like we did.
Add in your rice.
The final steps to finish the cooking:
- Next, add the soy sauce and the chicken broth. Stir it together. It will look like a lot of water. The rice will absorb it.
- Cover the pan, bring to a boil, then reduce to a simmer. Cook for about 15-20 minutes, stirring at least once, checking the liquid level.
- During the last 10 minutes, add your frozen vegetables, stir, and finish cooking until your rice is tender.
Serve this easy chicken dinner a bowl and enjoy!
Garnish with thinly sliced green onion. Or chopped parsely.
