Lime Poke Cake – Easy To Make, Moist & Tasty!
Lime Poke Cake is the perfect cake to make for celebrations like St. Patrick’s Day, birthdays, Easter, Cinco de Mayo, Mother’s Day, and any time you are looking for a moist cake with the addition of lime flavor.
This cake is very light, moist, and fluffy, and the lime taste is refreshing. With a whipped topping this cake is also perfect for any time during the spring or summer months.
Lime Poke Cake
All you need for this easy lime cake recipe is a white cake box mix, lime Jell-O, eggs, vegetable oil, and water. Use Cool Whip, whipping cream, or a buttercream frosting for topping the cake.
To make things simple I picked Cool Whip. It is easy to spread and looks pretty. Are you making this for St. Patrick’s Day or another celebration? Don’t forget to add sprinkles!
What is a poke cake?
A poke cake is a cake that has been baked (a boxed cake mix or homemade white cake). Cooled slightly, and with the back end of a spoon you poke holes into the cake for a filling (Jell-O or pudding) to be poured over and into the holes in the cake. Then after the filling is poured in and the cake is cooled it is frosted.

Jello Poke Cake Lime
Ingredients
- Betty Crocker Super Moist White Cake Mix
- 3 Egg Whites
(Eggs) - 1/2 cup of Vegetable Oil
- 1 cup water (for the cake)
- 1- 6-ounce Lime Jello
- 2 cups of boiling hot water (to dissolve the gelatin)
- 1 cup of cold water (for the jello)
- Cool Whip Topping
- Green Sanding Sugar or Wilton Light Green Sparkling Sugar (optional)
- Pam

Kitchen Tools You Will Need For This Recipe
- Mixing Bowl
- Spatula /Baking Spoon
- 13×9-inch Baking Pan
- Bowl for dissolving the Jell-O and a teaspoon
- Hot Pads
- Tea Kettle or a Microwave for boiling the water
Of course, if you want to mix the cake batter using a hand mixer or stand mixer you can.
Lime Poke Cake Recipe
Instructions
- Use a 13×9-inch Pyrex pan to bake the cake. Prepare the pan by spraying it with Pam. Set the prepared pan to the side, until needed.
- Preheat the oven to 350F degrees.
- Make the white cake mix according to the instructions on the cake box.
- Let it cool slightly.
- Use the back end of a cooking spoon or other utensil to poke holes into the cake.
- Mix the 6-ounce Lime Jello with 2 cups of hot water and dissolve the gelatin. Next, add 1 cup of cold water (it calls for 2 on the package, I only use 1 cup).
- Pour the lime jello over the cake and into the holes.
- Let the cake cool completely, prior to topping.
- Pick the topping of your choice. I used Cool Whip to spread over the cake. Add sprinkles if you like. We are a house divided so I add them to the cake for anyone who loves sprinkles. But, I think sprinkles are perfect for making the cake look festive for celebrations or birthdays!
- Cut the cake with a knife and wipe the knife in-between cuts.
- Serve on dessert or cake plates.

Recipe Notes:
- Bake this in a 13×9-inch pan. If you use a 9×9 pan or 8×8 pan you will probably only need a 3-ounce box of lime Jell-O. You will also need to reduce the cold water.
- Store any leftover cake in the refrigerator for up to 7-10 days, properly covered.
