Chicken Mozzarella Recipe – Juicy chicken with melted Mozzarella cheese, cherry tomatoes… All you need are a few fresh ingredients and a few pantry ingredients for this easy chicken dinner. For this recipe for chicken with melted cheese, we used chicken thighs. But, if you prefer chicken breasts you can easily adapt the recipe.

Chicken Mozzarella Recipe

This recipe is also known as Caprese Chicken. Make this chicken recipe in one skillet or pan.

Mozzarella Chicken Thighs

Prep time: 10 minutes
Cook time: 25-30 minutes
Serves: 6

Ingredients:

3 Tablespoons of extra virgin olive oil, divided
2 lbs. boneless, skinless chicken thighs
1½ Tablespoons of Italian seasoning, divided
Sea salt and Black pepper, to taste
3 Tablespoons of unsalted butter
¼ cup of chicken broth, preferably organic
½ cup of cherry tomatoes quartered*
8 oz. fresh Mozzarella cheese, sliced
½ teaspoon of red pepper flakes

Optional garnishes:
Sprig of fresh basil or pesto sauce

RECIPE NOTES: When shopping for groceries, note: You can use * a medley of multi-color tomatoes for visual appeal. You can also substitute fresh tomatoes of your choice. You can also substitute chicken breasts instead of chicken thighs.

Directions:

  1. Preheat the oven to 425°F.
  2. Heat one tablespoon of olive oil in a large, oven-safe skillet (this is my favorite one) over medium heat.
  3. Rub the chicken thighs with olive oil and sprinkle both sides with one tablespoon of Italian seasoning. Season with salt and black pepper, to taste, and transfer to the hot skillet.
  4. Cook for 4-5 minutes per side, or until the chicken develops a golden crust. Remove from heat and add butter, chicken broth, and cherry tomatoes. Top each chicken thigh with a slice of fresh Mozzarella cheese and sprinkle with crushed red pepper flakes and remaining Italian seasoning. Season with additional salt and black pepper, if desired.
  5. Transfer skillet to a pre-heated oven and roast for 15-20 minutes, or until chicken is cooked through and the Mozzarella is melted. Remove from oven and allow the chicken to rest for 5 minutes.
  6. To serve, garnish the top chicken with some pan sauce and add fresh basil sprigs or pesto sauce if desired.

Notes

  • You can use chicken breasts for this recipe if you prefer.
  • Cook time may vary slightly. Either way, you don't want to overcook the chicken.
  • Internal Temperature for cooked chicken is 165 F.
