This is an easy-to-make dinner idea that is baked in the oven for 20 minutes. Prep time is quick by layering ingredients! Use ground beef or ground turkey (or omit ground meat for a vegetarian version) for this meal idea.

If you have time to cook, you don’t even need a taco seasoning packet. You can make the taco meat from scratch; see how in this ground beef tacos recipe. You can prepare this ahead of time for the taco pie.
2 cups Colby Jack cheese (or) Mexican blend cheese
Green onions, chopped, for garnish
Tomato, chopped, for garnish
Optional garnishes: sour cream and salsa
Step-by-Step Instructions
Preheat the oven to 350°F
Prep and cooking
Cook the meat with taco seasoning per the package directions in a pan (drain off any excess fat, if not using lean ground meat).
In a skillet (I used cast iron), layer tortilla, beans, salsa, meat, and shredded cheese.
Repeat the process. Leave the last tortilla that is on the top plain.
Baking, additional cheese bake time, and garnishing!
Cover with foil and bake for 20 minutes.
Uncover, add cheese on top of the plain top tortilla. Then, bake for an additional 10-15 minutes. Or just until the cheese is melted and the tortilla edges are light brown.
Top with green onions and tomato garnishes. Add additional garnishes such as salsa and sour cream if you’d like.
Slice, Serve, and Enjoy!

Can you make taco pie vegetarian?
Yes, follow the same steps to make the recipe and omit the ground meat. Replace the ground meat with more refried beans, black beans, or (pre-made) Mexican rice.
I spotted this Vegan Taco Pie, it’s a little more labor-intensive but ready in 60 minutes, and looks yummy! I’m inspired to try my version, which is meatless. Would you use meat or make it vegetarian?
Can you make this recipe for taco pie ahead of time?
Yes! Just assemble, refrigerate, and pop it in the oven to bake when you are ready, the same day or the next day.
I heard you can freeze them, but, haven’t tried it myself. Wrap each 9×13 pan with a layer of plastic wrap. Set each pan to freeze in the freezer – resource (larger size taco pie freezer meal).
What to serve with a taco pie?
Sides can be as easy as canned or frozen corn, a salad bag, avocado, and additional salsa, and topped with sour cream.
