How to Make Easy Gluten-Free No-Boil Lasagna:
Step-by-Step Instructions for Lasagna
- Prepare the Sauce: In olive oil, sauté the minced garlic and chopped Italian peppers. Add the ground beef, breaking the beef up and combining the garlic and peppers. Stir while the meat is browning. Then add the Italian seasonings (1-2 teaspoons or to your preference) and jarred tomato sauce. Salt and pepper to taste. Stir, lid, and simmer the sauce (occasionally stirring) while you shred the cheese.
- Assemble the Lasagna: Shut off the sauce. In a large lasagna pan spread enough of the cooked sauce to cover the bottom of the pan (using a ladle). Next, layer the no-boil noodles. Add a layer of the sauce, mozzarella cheese and ricotta cheese, and shredded parmesan cheese. Repeat the process until the pan is full. On the last layer top the noodles with mozzarella cheese and parmesan cheese. Cover with aluminum foil and Bake!
- Bake Until Done: Bake the lasagna at 400°F for 30-40 minutes. The noodles will be soft, and cheeses melted. You can uncover the lasagna, then bake it 5-10 minutes longer to finish the bake. But be sure not to overbake it.
- Rest and Serve: Let the lasagna cool a little prior to slicing, this will make it easier to slice and serve.

Tips For Making the Best No-Fuss Lasagna
- Shred your own cheese! Although prepackaged is convenient, it doesn’t melt as well. I love using a box grater like this, it makes it easy.
- Regular no-boil lasagna noodles will work perfectly for this recipe too!
- You don’t need to make the sauce too watery. The no-boil noodles absorb liquid.
- To make this vegetarian omit the ground beef. Substitutions for the beef can be zucchini.
- Season the sauce to your taste preferences.
- During the baking towards the end of the cook time, check on your covered baking lasagna. Some ovens run hot. You don’t want to overcook or burn it. Test noodles for doneness and cheeses should be melty.
- This will make 9-12 slices depending on how big you cut the lasagna to serve it. For more tips see the post.
- If you don’t have garlic cloves, use garlic powder.
- And if you don’t have Italian peppers, use another sweet pepper or red pepper flakes to enhance the taste.
Make ahead and Freezing Tips for Lasagna
- You can make lasagna ahead of time: In an oven-safe pan! Do all the prep and keep it refrigerated until you are ready to bake it. Take it out 30-60 minutes before you bake it. This is important if you are using a glass pan (to keep it from cracking).
- To reheat lasagna: That has been baked and stored in the refrigerator: You can use the microwave (my favorite way) or in the oven covered (with aluminum foil) on 350°F, if everyone is having more.
- Freezing Lasagna: You can freeze lasagna baked (and cooled) or unbaked, in an oven-safe pan, covered properly, for 2-3 months.
- If freezing or taking to a party, I recommend using an aluminum pan like this.
