Get out your ingredients. A large mixing bowl, spatula, and loaf pan baking dish. You'll have this whipped up so quickly. How easy? Mix in one big bowl, and then scoop in the baking pan, and top it with ketchup. Then it goes straight into the oven to bake.
Start cooking your mashed potatoes. Add a side salad, carrots, or any veggie you like to complete your dinner. We didn't make gravy, honestly, this doesn't need it.

- Cook Time: Bake 45 minutes or until done.

- 1 cup baby spinach, washed, patted dry, and chopped
- Half an onion, peeled and chopped
- 1 tablespoon fresh Italian parsley, washed, patted dry, and chopped
- 1/3 cup roasted red bell peppers, chopped
- 1/2 cup feta cheese crumbles
- 1 egg (crack it into a small bowl first, then add to the mixture)
- 1/3 cup Italian bread crumbs
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- Pinch of salt
- 1/4 tsp black pepper
- 1 tsp Worcestershire sauce
- 1¼ to 1½ lb lean ground beef
- 1/4 cup + 2 tablespoons ketchup (for topping)

- Transfer the mixture to a pre-greased baking dish or loaf pan.
- Shape into a loaf.
- Brush the top of the meatloaf with the ketchup mixture.
- Bake at 400°F until fully cooked — about 40 minutes to 1 hour.
- Let rest before slicing.

Prepare the Vegetables and spices, bread crumbs, and egg
- Add minced garlic, chopped baby spinach, feta cheese, diced roasted red peppers, yellow onion, bread crumbs, and egg into a bowl.
- Next, add your spices.
- Mix.

Add the ground beef to the bowl and combine
Then add your ground beef (I used lean ground beef), combine, and put the mixture into your pre-sprayed baking dish.
Prepare the baking dish
- I pre-spray my baking dish with Pam Olive Oil

Add the ground beef mixture to your loaf pan
Slightly press down on your mixture, making the top even and level.

Cover the Top of the meatloaf with ketchup
Add your measured ketchup to the top. And spread it over the top of it.

Add the prepared meatloaf to the preheated oven.
Now, it's ready to bake! Add to the oven to bake. Does it get any easier? I think not. Unless you're ordering in. Wink, wink.
