Dear Creatives, I have a hamburger recipe that I tried from Meal Plan Monday #3 & yet to tackle a few of the others on my lists. I am going to share this recipe that was super easy & turned out great. Along with a few other Hamburger recipes that I have rounded up & have me ready to wipe down the grill to get barbecuing! This recipe is perfect for your upcoming spring & summer barbecues or just cook it on the stove top like I did during unseasonable weather. I love a good hamburger occasionally. Do you? If so you’ll love this recipe & the ones I rounded up. Oh, & lets not forget some barbecue sauces too.

All American Hamburgers

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

All American Hamburgers

Turns out well on stove top during unseasonable weather. Make sure to cook on medium heat do not flatten beef pattie when cooking. Cook as above until internal heat reaches at least 160*

Yield: 4 servings.

Ingredients

  • 2 tablespoons finely chopped onion
  • 2 tablespoons chili sauce
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons prepared mustard
  • 1 pound ground beef
  • 4 slices American or cheddar cheese, halved diagonally
  • 2 slices Swiss cheese, halved diagonally
  • 4 hamburger buns, split and toasted
  • Lettuce leaves, sliced tomato and onion, cooked bacon, ketchup and mustard, optional

Instructions

  1. In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into four patties.
  2. Grill, covered, over medium heat for 6 minutes on each side or until a meat thermometer reads 160° and juices run clear.
  3. During the last minute of cooking, top each patty with two triangles of American cheese and one triangle of Swiss cheese. Serve on buns with the lettuce, tomato, onion, bacon, ketchup and mustard if desired.

Dear Creatives, Have you tried Udi’s New Gluten Free Tortillas? I had the chance to try them for this review & will share a few details about this gluten free product with you, along with a recipe. When it comes to being healthy some people have to watch their diet carefully being Gluten free. ( gluten-free diet is a diet that excludes foods containing gluten. Gluten is a protein complex found in wheat) For me it is an option, that I can pick. Now being healthy doesn’t have to mean losing great taste! This is where Udi’s comes in. Their products such as their large & small tortillas deliver a wonderful flavor & texture that you would expect from any good tortilla.

I decided to make some simple quesadillas. They were with two cheeses & the others with beans along with the cheeses. You can make your favorite Quesadillas, Fajitas, Burritos….even enchilada bake with the smaller tortillas.

What you end up with is a dish that is not only good tasting, but healthy! Just add in your favorite ingredients to end up with a delicious dish like this. I love the thickness of these tortillas & taste.  I love how they turned out in my recipes.

INGREDIENTS: WATER, TAPIOCA STARCH, MODIFIED POTATO STARCH, SWEET RICE FLOUR, SUGARCANE FIBER, TAPIOCA SYRUP, PALM OIL, EGG WHITES, PEA PROTEIN, TAPIOCA MALTODEXTRIN, GLYCERINE, CANE SYRUP, GUM (XANTHAN GUM, SODIUM ALGINATE, GUAR GUM), CELLULOSE GUM, CULTURED CORN SYRUP SOLIDS AND CITRIC ACID (NATURAL MOLD INHIBITOR), SALT, LACTIC ACID, ENZYMES, FUMARIC ACID.

Single Serve Quesadilla

Ingredients

  • Single Serve Quesadilla
  • INGREDIENTS:
  • 1 Udi’s Gluten Free Flour Tortilla, Large
  • 1 tsp, vegetable oil
  • ½ cup shredded cheese, preferably cheddar or Mexican blend.
  • Optional Extras:
  • ½ cup diced chicken
  • ¼ cup diced tomatoes
  • ¼ cup chopped onions
  • 1 T sliced olives
  • 1 T diced mushrooms

Instructions

  1. DIRECTIONS:
  2. 1. Brush skillet with 1 tsp vegetable oil and heat to Medium-High.
  3. 2. Place Udi’s large tortilla in pan. Layer with a thin layer of cheese, leaving about 1/2 inch
  4. around edges.
  5. 3. Personalize quesadilla with thin layer of optional ingredients, if desired.
  6. 4. Fold quesadilla in half and let it cook in the pan 1-2 minutes until slightly brown underneath
  7. before turning to brown the topside.
  8. 5. Slide onto plate and enjoy!

Meal Plan Monday #Recipes

Dear Creatives, This week on Meal Plan Monday I am sharing two recipes I tried & how they turned out. First up for Valentines day I tried the cake recipe from the previous Meal Plan Monday & Double Bean Burrito Recipe. The Chocolate Cake recipe was from Country Living. The Double Bean Burritos were from My Recipes. Results both were good, but I did have come what happened with the cake moment. Here is what happened with the recipes & the results.

I made no alterations to the cake recipe other than to use a different type of oil. I didn’t have canola oil on hand. The cake was cooked the proper amount of time, but when I pulled them out the center had fallen. When cooled I flipped it over & frosted. Other than looking a little wonky in the middle the cake was delicious, it is a bitter sweet cake & it was frosted with a raspberry butter cream (I didn’t seed the raspberry jam) I served it for Valentines & everyone loved it. Why did it fall?  Was it the different oil? Maybe the leaving agent? Over mixed batter? Maybe when I checked on the cake? But in any case I thought I would share a few articles about this in case you’d like to know more & how to avoid the problem!

I don’t remember this ever happening to me until now & I have baked a lot of cakes, but hey it happens to the best of us right?! At least it was delicious & we had no problem finishing up the cake. So if you are on the hunt for a really good dark chocolate cake give this recipe a try, but read some of the tips for successful cakes prior it may help from the problem occurring. But, I wouldn’t let this mishap detour me from trying this recipe again. Deep Chocolate Cake Recipe

 

 

Now for the Double Bean Burritos this is a simple anytime, quick recipe. It is easy. I didn’t use rice in a bag. I heated my black beans without salsa, but next time I’m just adding them in as Sammie didn’t even want the black beans on hers, which was the whole purpose of me leaving it out to begin with. To be honest this is a very basic recipe & I make my burritos very much like this but, adding the black beans does give it a much more flavorful taste. I think any family would enjoy this. If you have kids you can do what I did & just assemble the kids burritos without the black bean & salsa if they are younger or don’t like black beans vs refried beans. I also love a good cherry pie. Something about the combination of sweet & a bit sour. I know exactly where my love of pies came from it was thanks to my grandmother. She was an avid baker, lover of sweets & showered us with treats every Sunday dinner at her house. Oh, I can just see those days, sunny even if they were rainy. All the love captured in one big bite of a yummy pie! But, it wasn’t just eating the sweet pies she made,  it was learning how to make them right along side of her. I remember her teaching me about patience right from baking those pies. Knowing that all good things take time & that even sometimes things that aren’t just perfect are still good enough to savor, enjoy & even love. I think that if you want to get something perfect like a pie you just have to get into the kitchen & dirty up your apron, as my grandma would say. Flour flying, sugar pouring, dough rolling pie! How can you not love a good lesson on how to make pies & love every single one down to the last bite! Well, off to get my hands all full of flour.

Sweet Chocolate A Chocolate Lovers #Recipe Round-up

Dear Creatives, When it comes to baking for Valentines Day or any special day it’s all about loving the chocolate recipes. Even if you wait to the last minute you can at least bake up some fudgy brownies, grab a cake mix or even just break down & visit your favorite bakery. You know I have this thing for baking & so does Sammie. We haven’t been getting into the kitchen to bake as much lately with the holidays behind us, but Valentines day is the perfect opportunity to heat up the oven and bake some sweet chocolate love with some of our favorite recipes we have found.

For us baking with chocolate means sharing the love. We usually hand stir & mix just like my grandma did & although I wish I had a great mixer I bet I would still hand mix many sweet chocolate recipes. Today I thought I would share some of the chocolate recipes that say love any way you stack them for today, tomorrow or any special day that you need that extra love & sweetness that one bite of chocolate can give. Chocolate is the perfect dessert for Valentines Day!

Meal Plan Monday #Recipes + 25 Chocolate Lightened Desserts

Dear Creatives, When it comes to Meal Planning sometimes you win & sometimes you lose! Or at least half the battle, that is. You can’t please everyone all the time. I tried this recipe Tasty Teriyaki Chicken from Meal Plan Monday #3. Personally I thought the recipe called for too much sugar so I reduced it by half. I don’t feel it altered the results at all. The sauce was plenty sweet, using the cornstarch to thicken it giving it that lovely bit of thickness so it wasn’t runny. The chicken was tender & I served it on a bed of rice just like this photograph. (My photo was a flop) Well, this week Sammie had this offal cold so I am not sure if it was her taste buds off or what, but she didn’t care for it. The Mr. & I enjoyed it, but he is not fond of rice. Oh well!

Maybe I have a love for rice because I went to school with open campus in the East Bay by an Asian market & each day for lunch would purchase their rice or fried rice, with Veggies. Yum! Probably the only thing I liked about high school at the time besides art or close to it. I couldn’t wait to get out & go to college. For this dish I served it along side green beans. Which I probably could of added to the crockpot toward the end. I think also adding carrots along with that would of given it the color & more of a Oriental flair. That being said, I would try this again & hope when Sammie isn’t sick her taste buds would enjoy this recipe. {gotta love picky eaters} This recipe very easy to do!

 

On this Meal Plan Monday #4 I think I’ll have more success! I have created a round up of recipes that are easy, healthy & then one that has 25 chocolate desserts! For those of you who are new to reading my meal plans; I find a group of recipes & it may take me longer than a week to go through them, write about the recipe, share photos if I can & share the results & thumbs up or…..but, each week I am trying to share what is going on in the kitchen & what I am cooking up! I hope that helps you when your looking for a good recipe to try!

For Meal Plan #4 I love the idea of making tamales but, have never tried. I don’t have a steamer & there is this lovely lady who comes around are neighborhood & sells them homemade. Heavenly, chicken & green chili tamales. How could I ever pass those up? I digress. But, I just happened onto this recipe from Muy Bueno Roasted Chili, Cheese & Bacon Mini Tamale Pies  Although Sammie doesn’t like bacon maybe if I try this & substitute with chicken or just chili & cheese it might just work for us! I can see this recipe served with a green salad topped with cilantro, green onion, avocado & tomato s.

Muy Bueno’s recipe was inspired by this recipe Mini Tamale Pies from Chow So maybe not the whole tamale but, close enough for less work in the kitchen. In my house Mexican & Latin American foods always rank high on the crowd pleasing end. So either of these or a variation of will be a  must try recipe! Although one day I will break down & grab the needed items & learn to make traditional tamales. Until then this may be the next best thing.

Oh, I have to admit last Valentines Day I tried to make chocolate mousse. Epic fail! I don’t know what I did wrong or where I went wrong. I am still gun shy making chocolate mousse. Have you ever tried? So that had me looking for recipes for the chocolates! Now if your looking for a rich dark chocolate cake recipe (photo above) this recipe is from Country Living might do the trick. or if you are trying to be healthier I found 25 lighter Chocolates all in one place. Yes, I am trying one of them.     Pappardelle with Portobello Bolognese Sauce

    Valentine’s Day is just around the corner, meaning it’s time to start figuring out what you’re going to do for your loved ones this year.  It’s easy to buy chocolates and a card at your local drugstore, but there’s another simple way to celebrate the holiday that’s a little bit more personal: cooking for someone you love!

    If you don’t think feeding someone qualifies as romantic, think again!  From chocolate-covered strawberries to the famous spaghetti and meatballs scene in Lady and the Tramp, cooking delicious food is one of the best ways to show someone that you love them.  Forget dining out at a fancy, expensive restaurant this Valentine’s Day and try making a romantic dinner from the comfort of your home instead.

    This recipe for Pappardelle with Portobello Bolognese Sauce is a great Valentine’s Day dinner option—it definitely falls into the category of romantic pasta and tomato sauce recipes—but it can also work as a hearty and delicious dinner recipe for any day of the week.  With tomatoes, mushrooms, beef and pork, it’s an amazing dish that will fill you up and keep you warm for the rest of winter.

    Pappardelle with Portobello Bolognese Sauce

    Total Time: 1 hour, 15 minutes

    Serving Size: 8

    Pappardelle with Portobello Bolognese Sauce

    Ingredients

    • Pappardelle with Portobello Bolognese Sauce from Hunt’s®
    • Total Time: 1 ¼ hours
    • Serves: 8
    • Ingredients
    • 1 tablespoon olive oil
    • 1 cup finely chopped yellow onion
    • ½ pound ground sirloin beef (90% lean)
    • ½ pound lean ground pork
    • 1 ¼ teaspoons kosher salt
    • ½ teaspoon ground black pepper
    • ¼ cup Hunt’s® Tomato Paste
    • 1 cup dry red wine (such as Pinot Noir or Cabernet Sauvignon)
    • 1 28 oz can Hunt’s® crushed Tomatoes
    • 2 cups sliced baby portobello mushrooms (about 5 oz)
    • 1 14 oz can lower sodium beef broth
    • 16 oz dry pappardelle or fettuccine pasta, uncooked
    • ¾ cup heavy cream
    • Chopped flat leaf parsley, optional

    Instructions

    1. Directions
    2. Heat oil in a 10-inch skillet over medium-high heat until hot. Add onions and cook for 3-4 minutes or until tender, stirring occasionally.
    3. Add beef, pork, salt and pepper. Cook and stir for 4-5 minutes or until meat is brown and crumbled. Blend in tomato paste; cook 2-3 minutes or until lightly caramelized.
    4. Add wine and simmer for 8-10 minutes or until wine is nearly evaporated. Add tomatoes, mushrooms and broth. Bring to a boil. Reduce heat to medium and simmer uncovered for 30-35 minutes or until sauce has reduced by about one third. Stir in cream and heat until hot.
    5. While sauce is simmering, cook pasta according to package directions. Drain and return to cooking pan. Add meat sauce to pasta and stir until pasta is coated. Serve immediately and sprinkle with parsley, if desired.

    Dear Creatives, I had the chance to try a recipe for Crockpot Chicken Tacos & it was a crowd pleaser! Winner, Winner chicken taco dinner. Yes, this Meal Plan Monday recipe was a hit! This recipe was one of the ones that I picked from the previous Meal Plan Monday  The great thing about this recipe is it is so simple & then just cooks in the crockpot for hours. Ready to serve in a few hours & no huge mess to clean up. Yes, mind kind of meal, easy, saves me time to do other things & a crowd pleaser. Let me tell you what I did to make this Crock Pot Chicken Taco recipe.

    The original recipe is called slow cooker black bean chicken tacos & was made by the SkinnyTaste. I only added a can of tomato sauce to the recipe other wise the entire recipe is the same. Although most of the time I don’t measure out my spices in a measuring spoon unless baking. Its a pinch or two of the items listed. Oh & I used shredded lettuce instead of cabbage.

    This recipe is super easy & yummy. Not only did we have the meat in the tacos, some with beans in the taco,  some tacos without. I made rice & served the beans over the rice which almost tasted like a chili. Double yum!  Sammie loved this recipe so much she ate up all the left overs after school & Saturday for breakfast, really! I was like really Sam? Yes, its that good I can’t wait until lunch. Just saying, you won’t have trouble having this disappear.

    Steps:

    1. Cut up boneless chicken breasts ( they were pretty thick)
    2. Add canned diced tomato with green chilies, tomato sauce & herbs
    3. Add in chicken & cook!

    For a larger group you may want to double the Crockpot Chicken Tacos recipe. I listed the recipe link right below for you just in case you’d like to try it.     Baking these pies & customizing them are easy peasy! There is more than one favorite Signature Deep Dish pie in our house but, topping the list is the Signature Deep Dish Dutch Apple Pie with Caramel Sauce! You know how much we love caramel sauce here & adding this topping just gives the already decicious pie that extra yummy flavor we love!

    The steps for baking & adding the topping are so easy & when someone bites into one of these pies they aren’t going to care how you made it! Just take the pie out of the freezer, place on a foil lined cookie sheet, center the pie in the oven baking per instructions on the box, use oven mitts pull the pie out & add the strusel topping, put back in oven baking until done. When ready pull out of the oven, let it cool a bit & add caramel sauce from the pouch onto the pie or slices of pie. Then its ready to serve. That was about an hours worth of work, mostly done by the oven!

    You don’t need a reason to serve pie when it is made this simply! No big mess, no long waiting time just ready & lovingly customized with your favortie pie topping combinations. Yum! The biggest debate in our house is what kind of customized pie & if you want your pie served warm or cooled! Warm always wins here!

    Meal Plan Monday & Vegetable Beef Soup

    Dear Creatives, Meal Plan Monday here today! Here are some recipe results & meals from left overs to share with you. I tried the slow cooker beef dip sandwiches from the previous Meal Plan Monday which only calls for your beef roast, beef broth & the french roll buns or hoagies for the sandwiches. It is a simple crock pot meal just put it in & cook it all day until tender & shreds apart. The only thing is even with adding 1/2 an onion & salt & pepper it just didn’t have enough flavor for our tastes, but it was still good. We just added a little horse radish or  brown mustard to the sandwich to give it that kick we like. If you are after a mildly flavored meal that is easy this recipe delivers just that!

     

    I used some of the left over meat to make beef vegetable soup the next day. It was super easy & it’s one of those kitchen sink, all in one pot kind of meals. What ever veggies you have on hand can go right in. Here is how & a simple recipe for beef vegetable soup. If you’ve read the blog for awhile you know Sammie loves soups so I am always up for cooking or trying new soup recipes.


    Beef Vegetable Soup

    Prep Time: 10 minutes

    Cook Time: 30 minutes

    Total Time: 40 minutes

    Beef Vegetable Soup

    Simple & a great way to use up left over beef shredded or cubed (roast, beef for stew or tri tip meat)

    Ingredients

    • Pre cooked left over beef
    • 32 oz + beef broth
    • 1 can diced tomatoes
    • 2 cloves garlic minced
    • 1 onion chopped
    • 3 potatoes (medium sized wash & peel + cube)
    • whole baby carrots (1/2 small bag)
    • 1 poblano chili pepper or 1 jalapeno
    • oregano 3-4 pinches
    • rosemary 1/4 tsp
    • pepper
    • 2 beef bullion cubes
    • 1 1/2 cup bow tie noodles

    Instructions

    1. saute onion & garlic
    2. add broth & bullion
    3. add meat, veggies & herbs
    4. cook for 15 min.
    5. add bow tie noodles cook another 15 min.
    6. Serve

    I tried Pioneer Woman’s Chicken Alfredo from the previous Meal Plan Monday’s line up. You might enjoy that, sorry I don’t have pictures. Be sure you know how to make sauces a few people mention not being able to get it to thicken. I looked around & these videos explains how & why which may help you if you’ve never made white sauce!

    I am reserving making the hummus dip for Super Bowl Sunday & did cook fish, but didn’t make the fish tacos. I baked the fish in the oven that day. Which is so easy to do if you never have. Just bread your fish, a little olive oil or non stick spray on a foil lined cookie sheet & bake, half way through just flip over to finish baking. About 20-30 min or until flaky. (depends on thickness of your fish) Yummy! ( I used Italian Seasoned Bread Crumbs) The recipes I picked for this week  may possibly be used for game day meals!
