Meal Plan Monday: Quick & Easy Dinners Under 30 Minutes! Plus #Recipes Ole!
I have a little confession to make when things get a little busy around here there are just some times you have to grab something easy to put together for dinners at home. We try only to eat out a few times a month, saving money for remodeling projects, trips and sending Sammie to science camp this year. When putting together a quick meal plan by grabbing from the freezer section I like to get things that are good tasting, on the healthier side and easy to put together under 30 minutes while still appealing to the whole family. Today’s meal plan and recipe checked all those marks.
Typically when I cook one of my families favorite foods include Mexican cuisine. Naturally when I had the chance to try Old El Paso frozen selections I was excited. Honestly, I had never tried them. Today I am sharing my selections along with the meal I made perfect for when you need a meal made under thirty minutes! I decided to pick Old El Paso’s chicken enchiladas and their chicken fajitas mix from the frozen foods section. The only thing I needed to add to the recipe was tortillas, optional cheese and a vegetable. A green salad seemed like the perfect choice. I often make up salads in advance and keep them in a sealed container for lunches and when I’m too busy to cook a vegetable. It’s a handy trick I use to get my gang to eat more veggies.
Start with your enchiladas. This is so easy to prepare, peel back cover a little and bake or to speed things up even more you can microwave then bake. Which is the option I picked.
Next you have 10 minutes to make a salad or set the table. I had a prepared salad from earlier so I set the table then poured the El Paso Chicken Fajita mix into my non stick skillet and occasionally stirred. Doesn’t get much easier!
Hot and ready to serve in less than thirty minutes!
The next day the Mr. took the left overs to work and came home saying he really had enjoyed his lunch. Which was great to hear and an added bonus of saving us preparing a lunch for the next day.
