Easy Pizza Stuffed Peppers With Pepperoni and Mozzarella

Do you love pizza? Make this fun dinner idea: Easy Pizza Stuffed Peppers. Fill bell pepper halves with rice, pepperoni, mozzarella cheese, Italian spices, and Don Pepino pizza sauce. Bake them covered; during the last 10 minutes, add a slice of mozzarella cheese, a little more pepperoni, and black olives. Bake uncovered until melted. You get all the cheesy pizza goodness in a stuffed bell pepper- delicious!

Ingredients for Easy Pizza Stuffed Peppers

  • 1 14.5-ounce can Don Pepino Pizza Sauce
  • nonstick spray
  • 1 teaspoon Italian seasoning
  • 3 medium/large bell peppers
  • 16-ounce fresh mozzarella cheese
  • 6 ounces (small package) sliced pepperoni
  • 6 ounces pitted (or pre-sliced) black olives
  • 2 cups uncooked rice, cooked according to package directions
  • optional diced jalapenos

Recipe Notes:

  • Measure 2 cups of uncooked rice, then cook it according to the package directions before making the filling.
  • Reserve 6 slices of fresh mozzarella, a handful of black olives, and some sliced pepperoni for topping the peppers during the last 10–15 minutes of baking.
  • Reserve a little Don Pepino Pizza Sauce to spoon over the peppers. You can also have an extra can on hand if you’d like more sauce for serving.
  • For a little heat, add a washed, seeded, and diced jalapeño to the rice filling, or use crushed red pepper flakes.
  • You may have rice filling left after stuffing the six pepper halves. We reheated ours and ate it with the leftovers.
  • I used a deep Pyrex baking dish for the stuffed peppers.

How To Make Easy Pizza Stuffed Peppers

Instructions

  1. Preheat the oven to 350°F. Spray a baking dish with nonstick cooking spray. Then spread some of the Don Pepino Pizza Sauce across the bottom.
  1. Slice the bell peppers lengthwise and remove the seeds and membranes. Place the pepper halves in the baking dish, cut side up.
  2. Add the chopped pepperoni, chopped black olives, chopped mozzarella cheese, Italian seasoning (about 1 teaspoon), and most of the remaining pizza sauce to the freshly cooked rice in a large bowl. Stir to combine. Note: Reserve a little sauce, 6 slices of mozzarella cheese, pepperoni, and olives, for the tops.
  3. Spoon the rice mixture into the pepper halves. Add the reserved sauce over the filling. Cover the dish with aluminum foil and bake for 45-55 minutes, or until the peppers are tender.
  4. Remove the foil. Top each pepper half with a slice of fresh mozzarella, quartered pepperoni, and black olives. Bake uncovered for another 10-15 minutes, until the cheese is melted.
  5. Let the stuffed pepper cool for a few minutes before serving.
