Chicken Fajitas

This Chicken Fajitas recipe is an easy 30 minute recipe you can make any night of the week. Make this on the stove top, serve with warmed tortillas or rice. You can use this chicken fajitas recipe for tacos, and burritos too.

Ingredients

  • You will need to have these ingredients on hand
  • Chicken skinless, boneless 1 package
  • Garlic
  • Salt pepper, paprika
  • Olive oil or vegetable oil
  • 1 Onion white or yellow
  • 1 each Red green, yellow bell peppers or in any combination
  • 2 Lime
  • 2 Avocados
  • Cheddar cheese or Monterey Jack cheese or your favorite Mexican cheese
  • Follow directions below for how to cook chicken fajitas

Instructions

  1. First thing to do is prep all your toppings, prep for cooking and set them to the side.
  2. 1. shred your cheese
  3. 2. slice your limes
  4. 3. slice all your bell peppers
  5. 4. slice your onions
  6. 5. mince your garlic
  7. 6. peel and slice avocados ( squeeze lime over top)
  8. 7.Next take your chicken out of the package, add oil to your non stick skillet and heat slightly.
  9. 8. Add in your chicken, the heat should be a medium heat. I have a gas stove so adjust as needed for electric stoves.
  10. 9. Sprinkle a dash of salt, pepper, paprika, and garlic to the top of your chicken breasts.
  11. 10.Cook on each side 5-8 minutes on each side until cooked to 165 degrees internal temperature.
  12. NOTE:When you flip your chicken to cook the second side add some red bell peppers (not all) into the pan.
  13. 11.Stirring the peppers as needed just to add a little more flavor to the chicken.
  14. 12.Take this all out of your pan.
  15. 13.Set onto a cutting board, let rest until ready to slice.
  16. 14. Add the rest of your bell peppers, onions, minced garlic. Cook in oil, stirring until tender.
  17. 15. Slice your chicken, then add it to a bowl, or plate.
  18. 16. Serve with warmed tortillas or Mexican rice. I

Recipe Notes

If you are making rice start the rice right at the same time the chicken is cooking.
To heat tortillas add 6 to a plate, (that is a microwavable plate ) cover with a paper towel, sprinkle water over the top, and heat for 2 minutes for 6. Remove the paper towel, and serve.
