The perfect blend of pumpkin spice and cinnamon will have your house smelling wonderful when it's baking. Cool slightly and slice up your pumpkin bread. Mix softened butter, 2 eggs, pumpkin puree and light brown sugar in your mixing bowl or mixer.
In a separate bowl - add all your dry ingredients together and gently mix all ingredients by hand to distribute dry ingredients.
Slowly add mixed dry ingredients to your mixer or bowl with already creamed wet ingredients. DO NOT OVER MIX!
Pre heat oven to 350 degrees.
Prepare your baking pan by spraying with a non stick spray. Add a little flour and move around your baking pan to cover sides. Shake out excess flour.
Add your mixed batter to your baking loaf pan.
Set your pan in the oven to bake it. It will take 45-60 minutes. Use a knife or tooth pick to see when it comes out clean. But, don't over bake. You will have to keep checking during the last 20 minutes.
Let cool slightly before removing from pan. You can use a knife along the sides if needed to loosen edges of baked pumpkin bread then... (be careful if you use a non stick pan this could scratch the sides. Try to remove bread from pan it first before doing this.)
Take a plate and place it over your baking dish and flip it over.
Serve with coffee and add butter to the top if desired.
