Ingredients
3crushed garlic cloves
2tablespoonslemon juice
2tablespoonsDijon Mustard
2tablespoonsOlive Oil
1/2teaspoonoregano
1/2teaspoonthyme
1/4-1/2teaspoonpepper
salt
2fresh sprigs of rosemary
Half an onion quartered
4lb.Top Sirloin Beef roast or Bottom Round or Top Round Roastyou get the idea
non stick food spray
4-6cut potatoes
Instructions
Crush your garlic
Squeeze lemon juice
Measure out Dijon and Olive Oil
Adding all these into your measuring cup. Next add all the dry herbs. Mix together.
Take out your roasting pan and spray with non stick food spray into pan.
Add meat fat side up.
Pour mix over top of roast add rosemary sprigs.
Next add cut washed potatoes and quartered onion around edges of pan.
Bake in oven at 350* until done. About 20 min. per pound. Use food thermometer to ensure it's cooked properly. 145°; medium, 160°; well-done, 170°). Remove to a warm serving platter. Let stand 10-15 minutes.
