Ingredients
6hard boiled eggs
3stocks celery wash & chop
1/2cucumber peeledwash & chop
1/4chopped fresh basil
2tbsp.Dijon mustard
1tbspMayoadd sparingly a little at a time adjust to more if needed
1tsppaprika
salt & pepper to taste
Instructions
First hard boil your eggs. While you are waiting chop up three celery stocks, one half of a cucumber (peeled) & a little basil ( about 1/4 cup). When eggs are done rinse with cold water, cool, peel & chop them tossing them into a bowl.
Next add in your Dijon mustard, a bit of mayo, 1 tsp. of paprika, salt & pepper to taste. Mix together in a bowl. I chilled mine for a bit prior to making the sandwiches but, you can use it right then or chill it.
