Yummy Strawberry Pound Cake & Oh So Easy #Recipe

Strawberry season and spring are synonymous here in the Central, CA. It comes early and stays late. There is nothing not to love about that! I looked for something to make then share since I haven’t been able to keep up with my Meal Plan Mondays. I was on the hunt I found a strawberry shortcake recipe that I had to try! You know how much I love baking well, I need to get as much in as possible prior to the hot summer months we get here! This recipe with the most deliciously perfect strawberries were a perfect pair! Perfect for strawberry pound cake.

It was the kind of recipe that scared me, only for the fact that it had no rising ingredients. I kept wondering if I should try it, but it looked simple enough. The images of the Strawberry Shortcake looked amazing. I had to try it, win or lose. One thing I can say is that after baking it I didn’t even have time to glaze a topping for it before all hands were on the deck cutting into it! Seriously mates, don’t you know I am baking to share on my blog!? lol

It was such an easy recipe. The directions are simple. Mix the batter in one bowl. Beat egg whites plus salt in another bowl. Fold strawberries into egg whites. Add folded egg white-strawberry mixture into batter. Put into prepared baking dish and bake.

I think the key to not having the rising ingredients must of been the egg whites. (some baker I am) My grandma would be proud of these stiff egg whites. All those lemon meringue pies she made while I helped crank the beater by hand, with her words keep going until the whites are stiff and you can turn it upside down while it holds on stiff. I can just hear her in my heart as if it was yesterday learning how. Glad I had a chance to use that skill.

Let cool! {insert glaze prior to cutting a slice or your crew members just might eat it all first!} Cut a slice prior to no one looking, then grab your coffee! I love my little slice of heaven while it lasted. Yes, they are begging for me to make another. Do you think I can get them to swab the deck in exchange? Probably not, but I’ll make it again regardless!

This isn’t the original recipe I used. I had saved it to Ziplist but, then it wasn’t there anymore! I hunted down the closest ones I can find to it. I’ll be trying a new recipe soon and updating my version.
