Apple Cider Muffins – Fall is the perfect time to bake apple muffins. One of the things I really enjoy about fall is getting back to baking. It reminds me of all those days I used to help my grandma in the kitchen. She had an apple tree and other fruits in her backyard. We’d gather them up and bake the day away.

When I used to live on a small piece of property we had apple trees. I know fall means pumpkin to so many but, I equally cherish apples. With all, it’s flavors, texture, and colors. We love baking new muffin recipes. Do you?

This recipe is easy to make and has all the perfect flavors of fall. Of course, it’s easily adaptable too. Don’t worry baking with alcohol cooks off the alcohol. But, if you prefer you can use a non-alcoholic cider for the recipe. Or natural unfiltered apple juice

I find adding wines to pasta sauce, hard cider to muffins give them the extra flavors herbs or spices just can’t give a recipe.

Apple Cider Muffins

Muffin Recipe |Harvest Harvest Apple Cider Muffins with Spotlight

These apple cider muffins are flavorful apple muffins that scream fall is here. Top it with the optional crumb topping and glaze. A must try the muffin recipe that is easy to make, and bake.

Prep Time 15 minutes
Cook Time 25 minutes
Additional Time 10 minutes
Total Time 50 minutes

Ingredients

  • Flour 1-3/4 cup
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1-1/2 tsp. cinnamon
  • 1/2 cup butter
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 2 eggs room temp.
  • 2 tsp. vanilla
  • 1/4 cup Hard Cider or Apple cider
  • 5.35 oz = to about 1/2 cup Greek vanilla yogurt
  • 2 cups peeled and chopped apples
  • Crumb Topping
  • 1/3 cup flour
  • 1-1/2 Tbsp. softened butter
  • 1/2 tsp.cinnamon
  • 1 tbsp.sugar and 1/3 cup brown sugar
  • adjust as the needed mixture needs to be crumbly
  • Glaze
  • 1 Tbsp. butter melted
  • 1/4 cup powdered sugar
  • 1 tsp. vanilla
  • 1 tbsp. of half n' half or whipping cream

Instructions

  1. Preheat oven 425 degrees
  2. Add all dry ingredients into a medium size bowl and stir together lightly.
  3. In a large bowl: cream butter and sugars. Add eggs, vanilla, yogurt, gumption and gently fold in apples.
  4. Next slowly add flour mixture to wet ingredients. Mixing gently.
  5. Put into lined cupcake pan. Prior to baking add the crumble mixture to the top.
  6. Mix together the crumble and add to the tops of each of the 3/4 filled muffins.
  7. Bake at 425 for 5-10 minutes reduce heat to 350 for approximately 15 minutes.
  8. Check prior to end of baking time to ensure not over baking. 
  9. If additional time is needed cover tops with foil loosely until centers are not gooey and cooked.

Notes

  • Watch baking times. As it starts higher and gets reduced. Remember to check muffins prior to finish, don't over bake.
  • You can adapt this recipe with sparkling apple cider, apple cider or a natural unfiltered apple juice. Optionally you can add 1/2 tsp. pumpkin spice to the recipe.
  • This recipe makes 12 muffins. I have not tried doubling the recipe.
