We are sharing our Easy Oatmeal Cookies. Get out a glass of milk, your favorite coffee or tea and get dunking. One half of the batch of the oatmeal cookies with chocolate chips and the other with apricots. Nuts are optional. Or make one big batch with your favorite additions. We used our favorite Oatmeal Cookies recipe, shown below.

I can’t say enough about this recipe, not only is it easy but, how it can be changed so easily with your favorite ingredients by adding them to the basic Oatmeal Cookie Recipe. You can create so many variations of oatmeal cookies to adapt it to your tastes. I know the images are not great they are from years ago. I promise to update them soon.

Of course the kid approved ones are the Oatmeal Chocolate Chip Cookies! My favorite the Oatmeal Apricot Walnut.

I get tired of making the same cookies so I like to adapt recipes trying different ingredients, flavors. We all love Oatmeal Cookies! Do you? It’s hard to wait for these to cool down they smell so good.

These Two Oatmeal Cookies Have

  1. Add in half a bag of semi sweet chocolate chips to half the batter by using the original recipe. (1 cup)
  2. Add in dried apricots half a bag = to about half to 1 cup chopped apricots for the recipe. (1 cup)
  3. Add chopped walnuts or chopped pecans. (1 cup chopped optional)

 If you aren’t a baker this is a no fail recipe.

Baking tip

Rotate your pan in the oven and check the bottoms to make sure they are lightly browned. When done pull them out with your baking gloves, let cool on the tray for several minutes before transferring to your baking rack to finish cooling. 

My grandma always made Oatmeal Cookies. My love of baking came from her. I even worked at a bakery just out of high school while in college. I love baking with my kids, showing them how to read a recipe, adapt one, and enjoy the fruits of their labor by tasting home baked cookies…..

You can just make one of the oatmeal cookies variations or split the batter in half for the two recipes.

Oatmeal Cookies

This is the old fashioned oatmeal cookie recipe I use when making all our oatmeal cookies and the variations.

I like using parchment you don’t have to scrap the pan clean. You can also use baking mats which I have since invested in. They aren’t expensive I just hadn’t gotten them when I first made this recipe years ago. 

BAKING TIP:

  • Use a cookie scoop for putting onto the pan, they end up the perfect size.

Milk Dunking Cookies

Ingredients

  • 1/2 cup butter softened
  • 3/4-1 cup cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1-1/2 cup all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt optional
  • 3 cups oatmeal quick or old fashioned my favorite is Quaker Oats Old Fashioned
  • 1/2 cup bag semi sweet chocolate chips for half the batch
  • 1/2 cup bag dried apricots for half the batch
  • 1 cup chopped walnuts optional

Instructions

  1. Pre heat oven to 350*
  2. Cream butter & sugar together
  3. Add eggs, vanilla into bowl.

  4. In a separate bowl mix dry ingredients: flour, baking soda, cinnamon and salt, mix well.

  5. Then add oatmeal mix together with wet ingredients & then split batch. In half the batch add semi sweet chocolate chips.
  6. In the other batch add apricots and walnuts.

  7. Scoop onto parchment paper or non stick pan.

    Bake 8-10 min. rotate pan if cookies are larger, then bake another 3-5 min. Watch to see they are light brown and check bottoms.

  8. Cool on baking sheet a few minutes then finish cooling on a cooling rack.

  9. Makes about 4 doz.

Recipe Notes

Original recipe calls for 1 cup raisins if not splitting the batch for variations use 1 cup of dried fruits, chocolate chips or nuts.

  2. My favorite oatmeal cookies are oatmeal chocolate chip with dried apricots. I love the tang of the apricots against the chewy oatmeal batter and rich chocolate chips. I recently made a gluten-free version using almond flour. My family devoured the batch in the blink of an eye. Your recipe is making me crave another batch!

    1. Hi Kim, I used dried apricots & only in half the batch they were gone pretty quick. I would imagine using fresh is a whole other ball game of baking & keeping fresh.
